- ½ cup oat bran
- 1 cup wheat bran
- ½ cup plain no fat Greek yogurt
- 1/2 cup milk

- 1 teaspoon baking powder

- cup brown sugar
- ½ teaspoon salt
- 1 cup fresh blueberries
- 1/3 cup vegetable oil
- 1 orange, juiced and zested
- 1 egg
- 1 teaspoon vanilla extract

- 2 large uncooked sweet potatoes, peeled, cut into bit-sized chunks
- 1 large uncooked red onion, cut in 1-inch chunks
- 1/4 tsp chili powder
- 1/4 tsp. table salt
- 1/8 tsp black pepper
- 1 Tbsp balsamic vinegar or white wine vinegar
- 1 oz frozen apple juice concentrate (about 2 Tbsp)
Skinny Cauliflower Mac and Cheese

- 2 cups cauliflower florets
