- 1 tablespoon butter
- 1 medium (110 grams) onion, chopped
- 2 medium (80 grams) celery stalks, chopped
- 2 garlic cloves, minced
- 1 (32-ounce or 910-gram) container reduced-sodium chicken broth
- 2 Yukon Gold potatoes, diced (about 2 cups)
- 2 cups (280 grams) fresh or frozen corn kernels
- 1 tablespoon fresh thyme or 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 cups (280 grams) rotisserie-cooked chicken breast, shredded
- 4 sprigs thyme for garnish, if desired
Minestrone soup

Heat three tablespoons of olive oil over medium heat in a large soup pot
- 3 tablespoons olive oil
- 1 cup minced white onion (about 1 small onion)
- 1 ⁄2 cup chopped zucchini
- 1 ⁄2 cup frozen cut Italian cut green beans
- 1 ⁄4 cup minced celery (about 1/2 stalk)
- 4 teaspoons minced garlic (about 4 cloves)
- 4 cups vegetable broth (Swanson is good *note ( Do not use chicken broth!*)
- 2 (15 ounce) cans red kidney beans, drained
- 2 (15 ounce) cans small white beans or 2 (15 ounce) cans great northern beans, drained
- 1 (14 ounce) can diced tomatoes
- 1 ⁄2 cup carrot (julienned or shredded)
- 2 tablespoons minced fresh parsley
- 1 1⁄2 teaspoons dried oregano
- 1 1⁄2 teaspoons salt
- 1 ⁄2 teaspoon ground black pepper
- 1 ⁄2 teaspoon dried basil
- 1 ⁄4 teaspoon dried thyme
- 3 cups hot water
- 4 cups fresh Baby Spinach
- 1 ⁄2 cup small shell pasta

Sweet and Sour Meatballs

Pumpkin Trifle

Make the cake according to directions on package
- 1 Spice Cake mix or Gingerbread Cake mix
- 1 can (14-16 oz) pumpkin
- 4 packages Jello instance butterscotch pudding (4 servings size)
- 3 cups milk
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp ground allspice
- 3 cups whipping cream - whipped stiff with 1/4 cup sugar and 1 tsp vanilla
