Greek Summer Salad

A light and refreshing, yet still creamy, Greek Salad
- 1 14.5oz can of Chickpeas
- 1 cucumber, peeled in stripes, large dice
- 3/4 pint of grape tomatoes, cut each tomato into fourths
- 1/4 red onion, finely diced
- 2 heaping soup spoons Greek Yogurt
- 1/2 lemon, juiced (add more to taste)
- 1.5 Tbsp Red Wine Vinegar
- 1/2 tsp Cavender's Greek seasoning (OR equal sprinkles of Oregano and Basil to taste)
- 1/3 cup feta
- Salt & Pepper (if desired)

- 5 - 6 cups unsalted soup stock
- 1 cup brown lentils
- 1 Tbsp olive oil
- 1 Tbsp fresh garlic clove, peeled & minced
- 1 Tbsp fresh jalapeño pepper, seeded & minced
- 2 - 3 cups peeled sweet potatoes or yams, cut in 1 inch pieces
- 1 cup diced celery
- 1/2 cup diced green pepper
- 1/2 cup diced red pepper
- 1/2 tsp dried thyme
- 1 tsp dried basil leaf
- 1 tsp paprika
- 1 tsp gr coriander
- 1/2 tsp gr cumin
- 1/2 tsp gr fennel
- 3 Tbsp tomato paste
- Fresh gr pepper to taste
- Optional: Braggs Liquid Aminos or soy sauce
- Optional: 1 tsp light molasses
- 1/4 cup minced fresh parsley
Secret Ingredient Three Bean Slow Cooker Chili

Please everyone with this mildly spicy and rich three bean chili! The secret ingredient deepens the flavor
- Seasonings:
- 2 lb Ground Beef (or ground turkey) as lean as you prefer
- 3 cloves of garlic, minced
- 1 white onion, diced
- 1 15oz can of corn (do not drain)
- 3 15oz cans of beans (I used pinto, kidney, and great northern, but any 3 will do!), drained and rinsed
- 2 15oz cans of crushed tomatoes
- 4 Tbsp tomato paste
- 1 can of water
- 1 Snickers Bar, regular sized (or any type of caramel/chocolate bar if there is a peanut allergy)
- 1 1/2 tsp salt (reserve 1/2 tsp)
- 1 tsp oregano
- 1 tsp Cayenne pepper
- 1 tsp ground cumin
- 1 tsp chili powder
