Greek Summer Salad

A light and refreshing, yet still creamy, Greek Salad. Perfect as a snack or a side.

  • 1

    14.5oz can of Chickpeas

  • 1

    cucumber, peeled in stripes, large dice

  • ¾

    pint of grape tomatoes, cut each tomato into fourths

  • ¼

    red onion, finely diced

  • 2

    heaping soup spoons Greek Yogurt

  • ½

    lemon, juiced (add more to taste)

  • 1.5

    Tbsp Red Wine Vinegar

  • ½

    tsp Cavender's Greek seasoning (OR equal sprinkles of Oregano and Basil to taste)

  • cup feta

  • Salt & Pepper (if desired)


Combine chickpeas, cucumber, tomatoes, and red onion. Add the liquid ingredients, yogurt, and Greek seasoning, and stir well. Taste, and add more liquid or seasoning to taste. Lemon will brighten the flavor, red wine vinegar will provide more acid. Add the feta and combine (add more feta if you just love feta!). After the feta is fully combined, taste again to see if salt and pepper are needed. Most often they aren't as the feta provides plenty of flavor.
