IRRESISTIBLE PEANUT BUTTER COOKIES

1. Heat oven to 375. Place sheets of foil on countertop for cooling cookies
- 3/4 cup Jif Creamy Peanut Butter
- 1/2 cup (1/2 stick) Crisco Shortening
- 1 1/4 cups firmly packed light brown sugar
- 3 tablespoons milk
- 1 tablespoon vanilla
- 1 egg
- 1 3/4 cups all-purpose flour
- 3/4 teaspoon salt
- 3/4 teaspoon baking soda
GROUND TURKEY SHEPHERD'S PIE - Rachel Ray

Yummy Rachel Ray recipe. We loved this the first time we ate it
- 4 large Idaho or russet potatoes (2½ to 3 pounds), peeled and cut into chunks
- Salt
- 2 tablespoons extra-virgin olive oil (EVOO)
- 2 slices bacon, chopped or snipped with kitchen scissors
- 2 pounds ground turkey or ground turkey breast
- Freshly ground pepper
- 2 onions, chopped 2 carrots, peeled and chopped
- 2 tablespoons Worcestershire sauce (eyeball it)
- 2 teaspoons poultry seasoning, such as Bell’s
- 2/3 cup heavy cream or half-and-half
- 1 large egg, beaten
- 2 tablespoons butter
- 2 tablespoons snipped or chopped chives
- 1 cup frozen peas, thawed
- 1 teaspoon paprika
APRICOT-GLAZED CHICKEN BREASTS

In small bowl stir apricot jam and curry powder until well mixed
- 1 12-oz jar apricot jam (1 cup)
- 1 tsp curry powder
- 2 large chicken breasts, each cut in half
- 1 1/2 tsp salt
- 1/4 tsp pepper
- 2 medium-sized tomatoes cut in half
MOLASSES COOKIES

- Cream together 1 1/2 sticks of butter and 1 cup sugar.
- Add: 1 egg
- 1/4 cup molasses
- Then add: 2 cups flour
- 2 tsp ginger (even less)
- 2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- Mix together well.
- Drop by teaspoonfuls in sugar to coat.
- Bake for 10-12 minutes in moderate oven (about 350 degrees).
SPICED BEEF

Serve spiced beef over drained noodles
- 1 cook 1 pound bag egg noodles, following package directions.
SALTED TOFFEE-CHOCOLATE SQUARES

Preheat oven to 350 degrees
- 13 graham crackers
- 1 bag (8 ounces) toffee bits
- 1 1/2 cups coarsely chopped toasted natural almonds
- 1/2 cup sugar
- 1 cup (2 sticks) unsalted butter
- 3/4 cup (4 ounces) bittersweet chocolate, chopped, or chocolate chips
- 3/4 tsp coarse salt
BASIC MEATBALLS

MAKE AHEAD AND FREEZE BY PLACING THEM ON A BAKING SHEET
- Stir together:
- 1 cup unseasoned bread crumbs
- 3/4 cup Roano or Parmesan cheese, finely grated
- 1/2 cup whole milk
- 1/2 cup low-sodium beef broth
- 1/2 cup chopped fresh parsley
- 3 eggs, beaten
- 1 Tbsp garlic, minced
- 2 pounds ground chuck
- 2 Tbsps dried oregano
- 1 Tbsp kosher salt
- 1 Tbsp ground black pepper
- 2 tsps dried basil
- 1 tsp crushed red pepper flakes
- pinch nutmeg
- 1 cup low-sodium beef broth
OATMEAL CRANBERRY WHITE CHOCOLATE CHUNK

1. Mix butter and sugar until light and fluffy
- Preheat oven to 375°.
- 2/3 cup butter or margarine
- 2/3 cup brown sugar
- 2 eggs
- 1 1/2 cup old fashioned oats
- 1 1/2 cup flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 1/4 cup craisins
- 2/3 cup white chocolate Chips/chunks
Bar B' Que Suce

Mix all ingredients together
- 1 cup catsup
- 1/4 cup Balsamic vinegar
- 1/4 cup honey
- 2 Tbsps mustard
- 1 Tbsp Worcestershire sauce
- Dash of bottled pepper sauce
- (Frank's pepper sauce)
- 1 tsp oil from garlic
TOMATO MAC 'N' CHEESE

Cook pasta according to package directions
- 12 ounces uncooked penne pasta
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 3 cups milk
- 1 pound white cheddar cheese, shredded
- 1/2 teaspoon salt
- 1/2 teaspoon ground mustard
- 1/4 teaspoon white pepper
- 1 cup chopped seeded tomatoes
