Chicken & Summer Vegetable Tostadas

Preheat broiler. Combine first 3 ingredients, stirring well
- 2 teaspoons canola oil $
- 1 teaspoon ground cumin
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper $
- 12 ounces chicken breast tenders
- 1 cup chopped red onion (about 1) $
- 1 cup fresh corn kernels (about 2 ears) $
- 1 cup chopped zucchini $
- 1/2 cup salsa verde
- 3 tablespoons chopped fresh cilantro, divided $
- 4 (8-inch) fat-free flour tortillas $
- Cooking spray $
- 3 ounces Monterey Jack cheese, shredded (about 3/4 cup)
Taco Soup

Combine all ingredients in Crockpot except Tortilla Chips, Shredded Cheese and Sour Cream
- 1 lb Ground Beef, cooked and drained
- 1 can corn
- 1 can Great Northern Beans(white)
- 1 can Black Beans
- 1 can Red Beans
- 1 can Diced Tomatos
- 1 Hidden Valley Ranch packet
- 1 Taco seasoning packet
- 2 cups water
- Tortilla Chips
- Sour Cream
- Shredded Cheese

Hearty Alphabet Soup

1. Combine meat, tomatoes, tomato sauce, water, and soup mix in slow cooker 2
- 1/2 lb Beef stewing meat
- 14.5 oz can stewed tomatoes
- 8 oz can tomato sauce
- 1 cup water
- 1 envelope dry onion soup mix
- 10 oz pkg frzn vegetables partially thawed
- 1/2 cup alphabet noodles, uncooked
Baked Sweet Hawaiian Chicken

Preheat oven to 325 degrees
- Sweet Hawaiian Ingredients:
- 3-4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 1/2 cup cornstarch
- 3 eggs, beaten
- 1/4 cup canola oil
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/3 cup soy sauce
- 1 teaspoon minced garlic
- 1/2 tablespoon cornstarch
- 1 red pepper chopped
- 1 (20 oz) can pineapple tidbits, drained
Baked Ziti Muffins

PREPARATION: Preheat the oven to 350˚
- 1 box whole grain penne, ziti, or rigatoni
- 1 1/4 pounds lean ground turkey (at least 90% lean)
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 10 ounces frozen, chopped spinach, thawed and well-drained
- 1 egg
- 1 egg white
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1 1/2 cups shredded part-skim mozzarella, divided
- 1 jar (24 ounces) marinara sauce
- 1/2 cup grated Parmesan

Heat oven to 400 degrees. Mix butter, powdered sugar and the vanilla in large bowl
- 1 cup butter
- 1/2 cup powdered sugar
- 1 teasp. Vanilla
- 2 1/4 cups all purpose flour
- 3/4 cup finely chopped nuts
- 1/4 teaspoon salt
Vegetable Beef Soup

1. Saute' ground beef in nonstick skillet
- 1 lb extra lean ground beef
- 14 1/2 oz can low sodium, stewed tomatoes
- 10 3/4 oz can low sodium tomato soup
- 1 onion chopped
- 2 cups water
- 15 1/2 oz can garbanzo beans, drained
- 15 1/4 oz can corn, drained
- 14 1/2 oz can sliced carrots, drained
- 1 cup diced potatoes
- 1 cup chopped celery
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- chopped garlic to taste, optional
Mexican Pasta

Bring a large pot of lightly salted water to a boil
- 1/2 pound seashell pasta
- 2 tablespoons olive oil
- 2 onions, chopped
- 1 green bell pepper, chopped
- 1/2 cup sweet corn kernels
- 1 (15 ounce) can black beans, drained
- 1 (14.5 ounce) can peeled and diced tomatoes
- 1/4 cup salsa
- 1/4 cup sliced black olives
- 1 1/2 tablespoons taco seasoning mix
- salt and pepper to tast
Hamburger Soup

1. Combine all ingredients except macaroni and Parmesan cheese in slow cooker
- 1 lb extra-lean ground beef
- 1/4 tsp. black pepper
- 1/4 tsp.dried oregano
- 1/4 tsp.seasoned salt
- 1 envelope of dry onion soup mix
- 3 cups hot water
- 8 oz can tomato sauce
- 1 Tbsp. low sodium soy sauce
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 cup macaroni, cooked
- 1/4 cup grated Parmesan cheese
Easy Veggie -Beef Soup

1. Place neat at the bottom of slow cooker 2
- 1 lb browned ground beef, or 2 cups stewing beef
- 2 cups sliced carrots
- 1 lb frozen green beans, thawed
- 14 1/2 oz can corn, drained or 16 oz bag frozen corn thawed
- 28 oz can diced tomatoes
- 3 cups beef or vegetable broth
- 3 tsp.instant beef bouillon
- 2 tsp.Worcestershire sauce
- 1 Tbsp. sugar
- 1 Tbsp. minced onion
- 10 3/4 oz can cream of celery soup
