Using a large saucepan, heat 2 teaspoons of the oil over medium heat
- 1 tablespoon olive oil
- 1/2 yellow onion, diced
- 1 large clove garlic, minced
- 1 cup quinoa, rinsed
- 2 1/4 cups vegetable broth
- 2 cups coarsely chopped fresh arugula
- 1 medium carrot, shredded (if you have a food processor, try the shredder disk)
- 1/2 cup thinly sliced shiitake mushrooms
- 1/2 bunch skinny asparagus, trimmed of the thick ends and sliced into 1-inch pieces
- 1/4 cup grated parmesan cheese (omit if vegan)
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper

- 2 Cups peanut butter
- 2 Cups sugar
- 4 eggs, beaten
- 2 tsp. PURE VANILLA EXTRACT
- 2 Cups mini semi-sweet chocolate chips
- 1 Cup pecans, chopped small
Aunt Karrie's Chocolate Marvel Pie

POUR MIXTURE INTO A PREBAKED PIE SHELL
- USING MIXER, BEAT IN ONE AT A TIME:
- 6 ounces chocolate chips (I used 8 ounces)
- 2 tablespoons sugar
- 3 tablespoons milk
- MELT ABOVE TOGETHER & COOL MIXTURE;
- 4 each egg yolks
- 1 teaspoon vanilla
- USING ANOTHER BOWL, BEAT IN
- 4 each egg whites
- 1/4 teaspoon cream of tartar
- 3 tablespoons sugar
- FOLD ALL THE ABOVE INTO CHOCOLATE MIXTURE

Sweet Potato Pie

Preheat oven to 350°. Mix the butter, sweet potatoes, sugar and milk until well blended
- Crust for 2 9-inch pies or 1 double crust pie:
- 1 stick (1/2 Cup) butter, softened
- 2 Cups cooked and mashed sweet potatoes (2 medium potatoes)
- 2 Cups sugar
- 1 5-oz. can evaporated milk (you can also use 2/3 Cup whole milk)
- 1 tsp. PURE VANILLA EXTRACT
- 3 eggs, beaten
- 1/2 tsp. GROUND NUTMEG
- 11/2 tsp. PENZEYS CINNAMON
- 11/2 sticks butter (3/4 cup)
- 11/2 Cups flour
- 1 tsp. sugar
- 1/2 tsp. salt
- 3-5 TB. milk

- 1/2 cup chopped red onion
