Eggs - Quiche

Fry bacon until crisp – crumble into shell, arrange cheese over bacon
- 12 slices of bacon
- 1/4 lb Swiss cheese
- 3 eggs
- 2 cups light cream (half & half)
- 1/8 t pepper
- Dash cayenne pepper
- 1/4 chopped onion
Soup - Onion Soup

In a heavy saucepan over medium heat, melt 6 T butter with 1 T olive oil
- 6 T (3/4 stick) unsalted butter, plus 2T cut into small bits
- 4 T extra-virgin olive oil
- 2 lb. yellow onions, very thinly sliced
- Salt and freshly ground pepper, to taste 1/2 T all-purpose flour
- 8 cups beef broth
- 2 cups water
- 1 cup dry white wine
- 16 slices coarse country-style bread, each about 1/2” thick, lightly toasted
- 2 garlic cloves, halved
- 4 cups shredded Gruyere cheese
Salad - Sweet Corn with Baby Beets and Basil

Bring a medium pot of water to a boil; season with salt
- Coarse salt and freshly ground pepper
- 2 ears of corn, husked and halved
- 8 baby beets (about 1 pound), trimmed and scrubbed
- Extra-virgin olive oil, for drizzling
- 1 to 2 T torn fresh basil
- Garnish: basil sprigs
Eggs - Chile Relleno Torta - Diane Mott Davidson

Preheat over to 375. Mix grated cheeses and spread evenly in buttered 10 inch pie plate (or 8x8 pan)
- 1/2 lb Cheddar cheese, grated
- 1/2 lb Monterey Jack cheese, grated
- 5 eggs
- 1/3 cups all-purpose flour
- 1 2/3 cups half & half
- 1 4ox can diced green chilies, drained
- 1/4 cup Picante sauce
Chicken - Cacciatore Naples Style – Pascento

Heat oil add green peppers and onion (do not over cook) remove peppers set aside
- Oil
- 1 1/2 green peppers cut into cubes
- 1/4 of large onion sliced
- 1/2 lb mushrooms
- 4 chicken breast cut into cubes
- 1 can of 29 oz whole peeled tomatoes
- 1 can of tomatoes paste
- 1/4 cup white wine
- Black pepper
- Some red pepper
- Oregano
- 3 to 4 cloves of garlic in slivers
- Parsley
Pasta - Pasta with Kale and Caramelized Onions in Blue Cheese Sauce

This pasta is easy and creamy
- 1 cup pecans , toasted on a pan or under a broiler for about 5 minutes and lightly crushed (optional, but highly recommended)
- 1 large onion, sliced
- 1 bunch kale, stems removed and roughly chopped
- 2/3 cup cream
- 4 oz of your favorite blue cheese, plus some for crumbling on top (I don’t recommend one that is too soft)
- a little milk, if necessary
- 1/2 lbs pasta like spaghetti, linguine or fettuccine
- Salt and pepper to taste
Holiday - Bread Stuffing for Turkey

In a medium saucepan melt butter and saute celery and onions add pepper and broth
- 4 cups of Pepperidge Farm Herb Seasoned Stuffing
- 1 cube of butter
- 1/2 to 3/4 cups finely chopped onion
- 1 cup finely chopped celery
- 1/4 t. pepper
- 2 t. poultry seasoning
- 1/2 t. sage
- 1 can (14 1/2 oz) chicken broth
Pasta - Eggplant and Ziti - Pascento

Peel one eggplant and cut into very thin slices (about ¼”)
- 1 Eggplant
- 4 jars of sauce
- 1 lb of ziti noodles
- 6 eggs
- Mozzarella cheese
- Parmesan cheese
Vegetable - Brussels Sprouts with Pomegranates and Vanilla-Pecan Butt

Combine the butter and vanilla bean seeds in a small bowl
- 6 tablespoons unsalted butter, slightly softened
- 1 vanilla bean, seeds scraped
- 1/4 cup toasted pecans, chopped
- Salt and freshly ground black pepper
- 1 pound Brussels sprouts, trimmed
- 3 tablespoons canola oil
- 3 tablespoons pomegranate molasses
- Seeds from 1 pomegranate
- 1 lime, finely zested
- 1 tablespoon finely grated orange zest
Pasta - Meatballs - Pascento

When browning add onion to oil When adding to sauce only brown and add meatballs, oil and onion to sauce When
- 1 lb ground beef
- 1/2 lb ground pork
- 2 eggs
- 2 to 3 garlic chopped
- Grating cheese
- Pepper
- Parsley chopped fine
- Old bread (soaked – take dough out and squeeze out all the water and crumble – when mixing if not firm enough add more bread)
