- 3 T. red-wine vinegar
- 1 t. minced garlic
- Freshly ground pepper
- 1 head romaine lettuce, torn into bite-size pieces
- 1 pint cherry or grape tomatoes, halved
- 1 1/2 cups crumbled feta cheese (8 oz)
- 1/2 red onion, halved and thinly sliced
- 1 large cucumber, peeled, halved and thinly sliced
- 1/2 cup kalamata olives, pitted

Cook pasta. Add all ingredients except mayo
- 1 14 oz pkg vermicelli coils
- 1 medium red onion, chopped
- 1 medium green pepper, chopped
- 1 T. parsley
- 1 1/2 t. celery seed
- 1/2 t. oregano
- 1/2 t. chopped chives
- 1/4 cup Italian salad dressing
- 1 cup mayonnaise
- Pepper to taste
- 1 lb shrimp or crabmeat, cooked and marinated in 1/2 cup lemon juice

In a sauté pan, render the bacon until crispy
- 1/2 lb bacon, small diced
- 1 cup julienne red onion
- 1 cup roasted pecans
- 1 T. plus 2 t. minced garlic
- 1/4 cup rice wine vinegar
- Black pepper
- 1 cup Goat’s cheese, room temperature
- 2 T. sour cream
- 1/4 cup sautéed leeks
- 1 egg beaten with 2 T. milk
- 1/2 cup flour
- 2/3 cup bread crumbs
- 3 T. olive oil
- 4 cups fresh spinach, cleaned and stemmed
- Black pepper mill
Salad - Lobster Salad with lime and ginger

1 ½ cups cooked lobster meat 1 t
- 1 1/2 cups cooked lobster meat
- 1 t. grated lime zest
- 1 t. fresh lime juice
- 1 t. grated, peeled fresh ginger
- 1 T. mayonnaise
- 1 scallion (white and green parts) chopped
- Freshly ground black pepper

Peel oranges; cut crosswise into ¼ inch-thick slices
- 3 medium oranges
- 3 cups tightly packed torn romaine lettuce
- 3 cups tightly packed torn curly leaf lettuce
- 1 pl fresh figs, each cut into 4 wedges
- 4 oz shopped lean, prosciutto
- 1/3 cup fresh orange juice
- 2 T. white wine vinegar
- 2 T. water
- 1 1/2 T. vegetable oil
- 1 T. honey
- 1/2 t. grated orange rind
- 1/8 t. hot pepper sauce

Put the broccoli rabe into a large pot of salted cold water
- 1/2 pound/250 grams broccoli rabe, finely chopped
- Salt
- 1 pound/500 grams orecchiette
- 1/2 cup/120 milliliters extra-virgin olive oil
- 6 anchovy fillets, minced
- Pepper
- Grated ricotta salata or toasted bread crumbs, homemade or commercial, for serving
Pork - Grilled Pork and Fig Kebabs

Trim fat from pork, and cut crosswise into 16 slices
- 1 lb pork tenderloin
- 2 T. honey
- 2 T. Dijon mustard
- 2 T. seasoned rice vinegar
- 2 T. unsweetened orange juice
- 1 clove garlic, minced
- 8 large fresh figs, halved lengthwise (about 3/4 lb)
- Vegetable cooking spray
Dessert - Figs in Red Wine w/ Blue Cheese

Combine first 5 ingredients in a large saucepan; stir well
- 1 cup Zinfandel or other dry red wine
- 1 cup water
- 1/4 cup unsweetened orange juice
- 1 T. lemon juice
- 1/2 cup sugar
- 16 fresh figs (about 1 lb)
- 2 T. (1/2 oz) crumbled blue cheese
Fish - Salmon with Mustard Greens

- 1 t toasted sesame oil, plus additional for drizzling
- 3 garlic cloves, chopped
- 1 (1-inch thick) piece peeled fresh ginger, minced
- 1 pound mustard greens, Swiss chard or kale, cleaned, stemmed and torn into pieces (about 10 ounces, trimmed)
- 1 T soy sauce, plus additional for drizzling
- 3 T water
- 2 (6 to 8 oz wild salmon fillets
- 1/4 t coarse salt
- 1/8 t freshly ground black pepper
