Cider Bacon Brussels Sprouts

Easy to make. Great for the winter cold and those special suppers
- 1 1/2 pounds of brussels sprouts cut lengthwise in half
- 4 slices of bacon chopped
- 1 medium shallot finely chopped
- 1 small tart apple cored and diced
- 2 sprigs of fresh thyme
- 1/2 cup apple cider of juice
- 1/2 cup toasted pecans
- freshly ground black pepper to taste

- FOR THE COOKIES
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder

- 16 open cup mushrooms (button mushrooms) - cut stalks flush
- 3 tblsp. oil of choice
- 5 tblsp. unsalted butter
- 3 cloves garlic - chopped fine
- 2 tblsp. fresh thyme - chopped
- salt and fresh ground pepper
- 1 1/2 tblsp. lemon juice
- 3 tblsp. fresh breadcrumbs / panko
Maple Walnut Rhubarb Crisp

A little different than most but very good
- 6 cups of rhubarb - cut into 1" pieces
- 3/4 cup pure maple syrup
- 2 tblsp. water
- 1 tsp. vanilla extract
- 1/2 tsp. kosher salt
- 5 tblsp. soft butter or margarine
- 1 cup quick oats
- 2/3 cup of all purpose flour
- 1/2 cup brown sugar, firmly packed
- 1 tsp. ground cinnamon
- 1/4 tsp. kosher salt
- 1 cup toasted walnut pieces

- 2 tblsp. chopped, oil packed sundried tomato
- 2 tblsp. roasted red pepper
- 2 tblsp. white wine vinegar
- 2 tblsp. balsamic vinegar
- 2 tblsp. chopped parsley
- 1 clove of minced garlic
- salt and pepper to taste

- 1 - (12 ounce) container caramel topping (For Example: **"Marzetti" Old Fashioned Caramel Topping)
- 2 - "Skor" Bars, or similar chocolate bars (buttery toffee crunch bars covered in milk chocolate)
- 5 - 6 apples ("Granny Smith", "Cortland") or *apples of your choice
