Braised Pork Belly Rice

Rinse the pork belly thoroughly with water
- 1 lb pork belly
- 4 cups water
- 1 cassia/cinnamon stick
- 1 star anise
- 1/4 cup Mizkan Oigatsuo Tsuyu Bonito Flavored Soup Base (No MSG)
- 4 tablespoons Mizkan Honteri Mirin
- 1 tablespoon dark soy sauce
- 4 hard-boiled eggs, shelled
- Some Chinese pickled mustard green, roughly chopped, optional
- Cilantro leaves, for garnishing
Twice Cooked Pork (Huí Guō Ròu)

Put the pork belly in a pot that it barely fits in
- 320 grams pork belly (11.3 ounces)
- 1 tablespoon Tianmianjiang (sweet wheaten bean paste)
- 1 tablespoon Shaoxing wine
- 1 teaspoon soy sauce
- 1 teaspoon sugar - granulated
- 1 teaspoon vegetable oil
- 1/2 inch piece ginger peeled and thinly julienned
- 2 teaspoons doubanjiang (chili bean paste)
- 75 grams garlic scapes (2.7 ounces) trimmed and chopped into 2 in. pieces
- 1 bunch scallions trimmed and chopped into 2 in. pieces
Avocado Egg Salad

Combine the egg yolks with the avocado, light mayo, yogurt, chives, vinegar, salt and pepper
- 4 large hard-boiled eggs; chopped 1/2 tablespoon finely chopped chives
- 4 hard boiled egg whites; chopped (discard the rest) 2 teaspoons red wine vinegar
- 1 medium hass avocado; cut into 1/2-inch pieces 1/2 tsp Kosher salt
- 1 tbsp light mayonnaise pinch freshly ground pepper
- 1 tbsp fat free plain yogurt
