Shrimp Scampi

Shrimp is one of my favorite foods and I am always looking for new ways to try it
- 1 pound linguine, cooked
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 pinch red chili pepper flakes (optional)
- 4 cloves garlic, chopped
- 1 pound shrimp, shelled and deveined
- 1/4 cup white wine
- 1 lemon, juice and zest
- 1 tablespoon butter
- 1 tablespoon parsley, chopped
Orange Butter

In a mortar and pestle or food processor, pound or process the orange zest and the sugar
- Zest of 1 large navel orange, finely chopped
- 1/4 cup sugar
- 1/2 cup unsalted butter, at room temperature
- 1/4 cup freshly squeezed orange juice
- 1 1/2 tablespoons CuraHao or other orange liqueur
Melty Chocolate-Truffle Cookies

Preheat oven to 375° with racks in center and upper third
- 1/2 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup unsweetened Dutch-process cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp espresso powder (optional)
- 2 tbsp unsalted butter, cut into pieces, room temperature
- 1/3 cup (about 3 oz) chopped dark chocolate
- 1 large egg
- 1 tbsp vanilla extract
- 1 cup powdered sugar

- 2 pounds of butter, room temperature
- 8 ounces of cleaned, sliced ramps, sauteed in butter
Butter Dip Buttermilk Biscuits

Preheat oven to 450F degrees
- 1/2 1/2 1 cup salted butter 1 stick
- 2 1/2 2 1/2 1/2 cups all-purpose flour
- 1 1/2 1 1/2 1/2 tbsp granulated sugar
- 1 1/2 1 1/2 1/2 tbsp baking powder
- 1 1/2 1 1/2 1/2 tsp salt
- 1 3/4 1 3/4 3/4 cup buttermilk
CILANTRO PESTO

Combine the olive oil, cheese, garlic cloves, cilantro and lime juice in a food processor and process until pureed
- 3 tablespoons olive oil
- 1/4 cup freshly grated Asiago cheese
- 2 garlic cloves
- 1 cup cilantro leaves and tender stems
- Juice of 1 lime
Cheesy Bacon Spinach Dip

Heat a large skillet over medium high heat
- 6 slices bacon, diced
- 8 ounces cream cheese, at room temperature
- 1 cup sour cream
- 1/4 cup freshly grated Parmesan
- 2 tablespoons mayonnaise
- 1 tablespoon Worcestershire sauce
- 2 cups baby spinach, chopped
- 1 cup shredded mozzarella cheese, divided
- 1 cup shredded cheddar cheese, divided
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley leaves
Bourbon Balls

1.Place chocolate chips into a microwave-safe medium bowl
- 1 cup semisweet chocolate chips
- 3 tablespoons corn syrup
- 1/2 cup bourbon (I used Jack Daniel’s)
- 2 1/2 cups crushed vanilla wafers
- 1 cup chopped walnuts (optional)
- 1/3 cup confectioners’ sugar
Shrimp Stuffed Zucchini

Split one Giant Zucchini in half (or several smaller ones
- One Giant end of summer zucchini or several small ones
- 1 1/2 pounds cooked baby shrimp
- 2 c. shredded Monterey jack cheese
- 1 c. Italian seasoned Panko bread crumbs
- (DO NOT use regular Progresso bread crumbs )
Ham & Goat Cheese Croissant-No Sauce

- Sandwich:
- 4 croissants, baked and halved lengthwise
- 8 tsp whole grain mustard
- 8 tomato slices
- 12 oz smoked ham, thinly sliced
- 6 oz. softened fresh goat chess
- 3 Tab. chopped chives
