- 1/4 teaspoon vanilla
- 2 tablespoons Kirsch (optional)
- 2/3 cup apricot jam

This is my version of Bon Appetit Magazine's Best Eggplant Parmigiana
- 2 large eggplants
- sea salt
- ¾ cup grated parmesan
- 1 ½ cups breadcrumbs
- 1 tablespoon dried oregano
- 1 cup flour
- 3 eggs, beaten
- olive oil
- ½ bulb garlic, chopped
- 1 onion, chopped
- ½ cup white wine
- 4 large tomatoes
- 1 tbsp tomato paste
- ½ tsp chili flakes
- ½ cup water
- ½ cup chopped parsley and basil
- 2 cups grated mozzarella cheese

- 2 1/2 cups flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 tsp. cinnamon

Baked Eggplant Parmesan

Preheat oven to 375 degrees
- Extra-virgin olive oil, for brushing
- 2 large eggs
- 3/4 cup plain dry breadcrumbs
- 3/4 cup finely grated Parmesan, plus 2 tablespoons for topping
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Kosher salt and freshly ground pepper
- 2 large eggplants (2 1/2 pounds total), peeled and sliced into 1/2-inch rounds
- 6 cups (48 ounces) store-bought chunky tomato sauce or homemade Chunky Tomato Sauce
- 1 1/2 cups shredded mozzarella

- 1-1/2 shredded Swiss cheese

Jacques Pépin's Fromage Fort

Place the peeled garlic in the bowl of a food processor and process for a few seconds, until coarsely chopped
- 3 to 4 garlic cloves, peeled
- 1 pound leftover pieces of cheese, a combination of as many hard and soft varieties as you desire (like Brie, cheddar, Swiss, bleu, mozzarella or goat), trimmed to remove surface dryness and mold (see notes)
- 1/2 cup dry white wine or vegetable broth or a mixture of both
- 1 teaspoon freshly ground black pepper
- Salt, if needed
