Lemon Meringue Pie - Mom's

Combine pie filling, sugar, and 1/4 cup water in a saucepan
- 3 3/8 ounces Jell-O Lemon Pudding and Pie Filling
- 2/3 cup sugar
- 2 1/4 cups water
- 3 eggs, separated
- 2 tablespoons lemon juice
- 2 tablespoons butter
- baked 9" pie shell
- 6 tablespoons sugar

This is what you do set oven to 350
- 12 to 15 Russet potatoes
- 1 cup of chopped onion
- 1 cup mayo
- 1 to 2 pounds of velveeta cheese cubed (depending how cheesy you are! LOL!)
- 1 pound of bacon chopped into 1 inch squares (i put the whole thing in the freezer for a few mins to make slicing easier) then take the whole thing and start slicing

- 1 onion, cut into 1/4-inch dice
- 3 cloves garlic, minced
- 1 1/2 pounds wild mushrooms, cleaned and coarsely chopped
- 1/4 cup Madeira wine, or cognac
- 2 tablespoons all-purpose flour
- 1 tablespoon chopped fresh flat-leaf parsley, for garnish
