- For the steak:
- 1/2 cup freshly squeezed lime juice
- 1/2 cup blanca tequila
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp chili powder
- 1 garlic clove, minced fine
- 1/2 cup finely minced fresh cilantro
- 1/4 cup canola or vegetable oil
- Freshly ground pepper
- 1-1/2 lb flank steak, trimmed
- For the salsa:
- 1 small red onion, finely chopped
- 2 garlic cloves, finely minced
- 2 jalapeño pepper, minced
- Juice of four limes (approx. 3-4 Tbsp) + zest of one lime
- Juice of one orange
- 1 cup chopped cilantro leaves and stems
- 2 pints cherry tomatoes
- 4 Tbsp extra-virgin olive oil, plus some
- Kosher salt and fresh ground black pepper
Thyme Grilled Lamb Chops

Prepare a gas grill for direct-heat cooking over medium-high heat
- 2 -- 2 garlic cloves
- 1 1/2 -- 1 1/2 tsp thyme leaves
- 1/2 -- 1/2 tsp hot red pepper flakes
- 1 -- 1 Tbsp cider vinegar
- 2 -- 2 Tbsp extra-virgin olive oil

Heat a large saucepan on the stove over medium heat and start sauteing the bacon
- 6 slices thick cut bacon, diced or cut using kitchen shears
- 1 small onion, chopped
- 4 garlic cloves, minced
- 1 15oz can diced tomatoes
- 2 14oz cans cannellini beans, drained
- 1 12oz package frozen spinach
- 6 C chicken broth
- 3 cups water
- 1 8oz can tomato sauce
- 1 TBS dried parsley
- 1 tsp salt
- 1 tsp ground black pepper
- 1 tsp oregano
- 8 oz rotini pasta, uncooked
Korean Chili Paste Spicy Chicken

In a large bowl, mix all ingredients EXCEPT chicken together
- 2-3 lbs boneless, skinless thighs
- 1/4 cup Korean chili pepper paste (gochujahng)
- 2 tablespoons soy sauce
- 2 tablespoons water
- 1/4 cup + 2 tablespoons white sugar
- 2 tablespoons mirin (or sake if you can't find mirin)
- 1/2 cup onion, pureed (done in a mini prep chopper is perfect)
- 3 tablespoons ginger
- 2 tablespoons garlic

- Snow peas- 1/2 lb trimmed, strings removed, cut in half

1. Preheat oven to 400 degrees F (200 degrees C)
- 6 * 6 (5 ounce) salmon fillets
- 4 * 4 cloves garlic, minced
- 1 * 1 tablespoon white wine
- 1 * 1 tablespoon honey
- 1/3 * 1/3 cup balsamic vinegar
