Baked Potato Soup

Melt butter in a large soup pot or Dutch oven, then little by little stir in flour until smooth
- 2/3 cup butter
- 3/4 cup flour
- 4 cups cubed, baked potatoes, peeled
- 8 cups milk
- 1/2 cup thin sliced green onions
- 2 cups shredded cheddar cheese
- 1 cup of sour cream
- Several slices of bacon, cooked, drained, coarsely chopped
- Salt and pepper to taste
Fried Vermicelli xiamen-style

1. In a pot of boiling water, blanch the bean sprouts for 1 minute, then drain and set aside
- 2/3 c bean sprouts
- oil for deep frying
- 4 oz. rice vermicelli noodles
- 6 oz. chicken breast fillet, thinly sliced
- 1/2 c shrimp, devained
- 1 lrg green bell pepper, sliced
- 1 lrg red bell pepper, sliced
- 1 chicken broth cube
- 1/2 tsp oyster sauce
- 1/2 tsp sesame oil
Yang Zhou fried rice

1. Give the cold cooked rice a thorough raking to separate the grains
- 2 3/4 c cooked rice
- 2/3 c raw peeled shrimp
- 2 T oil
- 2 scallions, chopped
- 3 eggs, beaten
- 2/3 c roast pork
- 2/3 c crab meat
- 2 T frozen green peas
- 2 T light soy sauce
- 1 tsp black pepper
- 1 T broth granules
Boiled Rice

Lemongrass Pork Stir-fry

1. Marinate the Pork- Cut off and discard the leafy tops from each lemongrass stalk
- Lemongrass- 4 stalks
- Garlic- 6 cloves chopped
- Fresh cilantro- 4 T chopped
- Pepper
- Pork loin, 3 lb cut into bite-sized cubes
- Lemon juice- 1 lemon
- Fish sauce- 2 T
- Brown sugar- 2 t
- Corn or peanut oil- 4 T
- Shallots- 6 thinly sliced
- Green onions- 4 thinly sliced
- Steamed rice
Teriyaki Pork Chops

1. Mix all of this into a tupperware container or a ziploc bag and marinate for at least 30 minutes or as long as 2...
- 4 pork chops
- 1 cup soy sauce
- 2 tbsp sesame oil
- 1 heaping tbsp sugar
- 4 cloves garlic, minced
- 5 stalks green onion, minced
- 2 tbsp ginger root, minced (or more or less depending on your taste)
Banana Crumb Muffins

1. Preheat oven to 375 degrees F (190 degrees C)
- 1 1/2 * 1 1/2 cups all-purpose flour
- 1 * 1 teaspoon baking soda
- 1 * 1 teaspoon baking powder
- 1/2 * 1/2 teaspoon salt
- 3 * 3 bananas, mashed
- 3/4 * 3/4 cup white sugar
- 1 * 1 egg, lightly beaten
- 1/3 * 1/3 cup butter, melted
- 1/3 * 1/3 cup packed brown sugar
- 2 * 2 tablespoons all-purpose flour
- 1/8 * 1/8 teaspoon ground cinnamon
- 1 * 1 tablespoon butter
Alfredo Sauce

In a large saucepan, stir together the cream cheese, Parmesan, butter, and cream
- 6 slices bacon cooked crisp and drained then crumbled...set aside.
- 8 ounces cream cheese -- cubed
- 3/4 cup grated Parmesan cheese
- 1 stick butter -- softened
- 1/2 cup heavy cream
- 8 ounces fettuccine -- cooked and drained
- 1/8 teaspoon fresh grated nutmeg
Caribbean Steak

Preheat the broiler. Combine 1 T
- 3 T. olive oil
- 3 t. jerk seasoning (purchased, or make it as follows)
- 1 t. salt plus more to taste
- 1 lb. thin steak (flank or carne asada cut)
- 2 cloves garlic
- 1 can black beans
- 1/4 cup water
- 1 ripe mango
- 1 ripe avocado
- 1 T. lime juice
- 1/4 cup chopped cilantro

- 1 T. rum
- 4 large flour tortillas

- 1 T peanut oil or vegetable oil (or slightly more, depending on the pan you have)
- 3 T minced red onion or shallots
- 2 T minced garlic (I used minced garlic from a jar but fresh garlic would be even better)
- 2 T grated ginger root
- 1 1/2 lbs. ground turkey
- 4 T soy sauce (I used Tamari)
- 1 T Chile Garlic Sauce (or slightly more if you like spicy foods)
- 1 tsp. fish sauce (probably optional, although I like fish sauce!)
- 1 cup chopped fresh cilantro (about 1/2 large bunch)
- 1/3 cup chopped peanuts (optional, especially for braces wearers!)
- 1 large head or 2 small heads Boston Lettuce or butter lettuce, or substitute 1 head iceberg lettuce
