Lemon Coconut Delights

Gently melt about half of the coconut oil on the stove
- 1 cup expeller-pressed (refined) coconut oil (find quality coconut oil here)
- 2 1/2 teaspoons lemon zest (about one medium lemon’s worth)
- 1/4 cup lemon juice (about one medium lemon’s worth)
- 2 tablespoons honey
Rioja Chicken

Place chicken pieces & olives in very large bowl
- 8 Chicken Breast Halves 1 tsp – Salt
- 6 Drumsticks 1/2 tsp – Pepper
- 6 Thighs 6 Garlic Cloves, minced
- 1 Cup – Green Olives 2 Bay Leaves
- 1/4 Cup – Olive Oil 1/4 Cup – Lemon Juice
- 1/4 Cup – Red Wine Vinegar 1 Tbsp – Corn Starch
- 1 Tbsp – Oregano 1/4 Cup – Orange Juice
- 1 tsp – Orange Peel 3/4 Cup – Brown Sugar
Shrimp and Avocado Salad

Preheat the oven to 400°F(200°C)
- 1/4 cup raw pumpkin seeds(pepitas)
- 1/4 cup+1 tbsp extra-virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- 1 small shallot,thinly sliced
- 1/4 cup chopped cilantro
- 1 large grapefruit
- 1 avocado,cut into 1/4-inch lengthwise
- salt and freshly ground black pepper to taste
- 3/4 pound shelled and deveined large shrimp
- 5 oz head of Boston lettuce,torn into bite-size pieces
Healthy Honey Mustard

Whisk all the ingredients in a bowl
- 1/2 cup plain Greek yogurt (vegans can try coconut yogurt)
- 2 T yellow mustard
- 1 1/2 T raw honey
- 1 T lemon juice
White Bean and Barley Soup

Heat the oil in a large soup pot over medium heat with the bay leaves
- 1 large onion cut in 1/2 inch dice
- 3 cloves garlic, finely minced
- 1 tablespoon oil of choice
- 1 pound Italian sausage (mild or hot according to your preference)
- 1 bay leaf
- 1/2 tablespoon minced fresh oregano or 2 heaping teaspoons of dried
- 1 cup roasted tomato sauce
- 2 1/2 cups of white beans cooked in bone broth
- 1 1/2 cups of barley cooked in bone broth
- 4-5 cups bone broth
- Salt and pepper to taste
- Grated Romano cheese and fresh oregano sprigs for garnish

- Crust: 1 1/2 cup graham cracker crumbs
- 1/2 cup sugar
- 4 Tbsp butter
- Filling: 1/2 cup lime juice
- 1 can sweetened condensed milk

- 2 Tbsp – Heavy Cream
- 2 Eggs
- 1/4 Cup – Butter, softened
- 1 tsp – Vanilla
- 3 Tbsp – Flour
- 1/2 tsp – Cinnamon
- 3/4 Cup – Brown Sugar
- 1/2 Cup – Sugar
- 1/2 Cup – Pecans, chopped
Grilled Green Tomatoes with Creamy Basil Sauce

- 1/4 cup mayonnaise
- 1/4 cup fresh basil leaves
- 1 small garlic clove, minced
- 1 tablespoon fresh lemon juice
- 3 green tomatoes
- 1 tablespoon vegetable oil
- Coarse salt and ground pepper

- 1 Can Stewed Tomatoes 1/4 Cup – Flour
- 1/4 Cup – Ketchup 6 – 8 oz Velveeta
- Salt & Pepper Biscuits, prepared
- 1 1/2 Tbsp – Onion Powder
