Spaghetti Squash Lasagna

Cut spaghetti squash in half lengthwise and place face down in a pan with a little bit of water
- 1 small spaghetti squash (about three pounds)
- 1 1/4 lb bulk mild Italian sausage (or Italian sausages with meat removed from casings)
- 16 oz tomato pasta sauce (from a jar or homemade)
- Oregano
- Basil
- Parsley
- Salt
- Pepper
- 16 oz cottage cheese (or 8 oz cottage and 8 oz ricotta)
- 8 oz mozzarella cheese
- 4-6 oz cheddar cheese
- 1/2 cup grated parmesan
Strawberry Bread

Sift dry ingredients. Make a well
- 3 Cups – Flour
- 1 tsp – Baking Soda
- 1 tsp – Salt
- 3 tsp – Cinnamon
- 1 1/4 Cups – Oil
- 2 Cups – Sugar
- 2 Pkgs – Frozen Strawberries, thawed
- 4 Eggs, beaten
Rainbow Fruit Salad

Mix 1st five ingredients. In large bowl, combine fruit
- 1/2 Cup – Honey
- 1 Cup – Blueberries
- 1/3 Cup – Orange Juice
- 2 Bananas, sliced
- 2 Tbsp – Lemon Juice
- 2 Nectarines, sliced
- 1/4 tsp – Ginger
- 2 Cups – Strawberries
- 1/8 tsp – Nutmeg
- 2 Cups – Grapes, sliced
- 5 Cups – Cantaloupe, cubed
Eskimo Cookies

Mix all but powdered sugar
- 3/4 Cup – Butter
- 5 Tbsp – Cocoa Powder
- 3/4 Cup – Sugar
- 2 Cups – Oats
- 1 tsp – Vanilla
- Powdered Sugar
Chocolate Coconut Butter Bites

Dump shredded coconut into your food processor
- 1 lb. (or 5 1/3 cups) unsweetened shredded coconut
- 1/2 cup cocoa powder
- 1 teaspoon honey
- 7 drops SweetLeaf clear liquid stevia (or substitute more honey to taste)
- 1/4 teaspoon vanilla extract
Baked Chicken Legs with Apricots and Olives

Liberally salt and pepper the chicken
- 8 chicken legs
- Sea salt and freshly ground pepper
- 4 tablespoons of extra virgin olive oil
- 2 medium onions, finely diced
- 4 cloves finely minced garlic
- 2 teaspoons finely minced mint
- 1/2 teaspoon crushed red pepper flakes
- 2 dozen dried apricots, cut in half
- 3/4 cups green olives
Hungarian Butterhorns

- 4 Cups – Flour
- 1 1/2 Cups – Butter
- 1/2 tsp – Salt
- 3 Eggs, separated
- 2 tsp – Vanilla
- 1 Cup – Sour Cream
- 1 Pkt – Dry Yeast
- 1 Cup – Sugar
- 1/2 Cup – Walnuts, finely chopped
Green Bean with Cremini Mushroom and Onions

Preheat oven to 350 degrees
- 1 lb. green beans, trimmed
- 6-8 oz. package cremini mushrooms
- 2 cloves garlic, minced
- 1/2 onion, sliced
- 4 tablespoons butter, divided use
- 2 tablespoon Wondra flour*
- 1 c. milk or half & half
- 1/2 c. Kikkoman panko bread crumbs
- salt and pepper
Harvest Baked Apples

Remove cores from apples leaving ½ inch at bottoms
- 8 Medium Baking Apples
- 1 Cup – Sharp Cheddar
- 1/2 Cup – Orange Juice
- 1/4 Cup - Raisins
- 1/4 Cup – Brown Sugar
- 1/4 Cup – Pecans, toasted
- 1/2 tsp – Cinnamon
Corn Bread
