  • 2 2 poblano peppers, diced
  • 1 1 green bell pepper, diced
  • 1/2 to 1 1/2 to 1 yellow bell pepper, diced
  • 3 stalks 3 stalks of celery, diced
  • 2 2 carrots, diced
  • 1 large 1 large zucchini, chopped
  • 1 cup 1 cup frozen corn (optional)
  • 1 14 oz can 1 14 oz can ground tomatoes
  • 1 28 oz can 1 28 oz can diced tomatoes, undrained
  • 1 1 recipe (see below) taco seasoning, or 1 seasoning packet
  • 1 tsp 1 tsp cocoa powder
  • TACO SEASONING
  • 1 Tbs 1 Tbs chili powder
  • 1/4 tsp 1/4 tsp garlic powder
  • 1/4 tsp 1/4 tsp onion powder
  • 1/4 tsp 1/4 tsp oregano
  • 1/2 tsp 1/2 tsp paprika
  • 1 1/2 tsp 1 1/2 tsp cumin
  • 1 tsp 1 tsp salt
  • 1 tsp 1 tsp pepper
  • 1/4 tsp 1/4 tsp crushed red pepper flakes
