- Stir together:
- 2lbs2 lbs of ground turkey, beef, or a combination of both
- 2Tbs2 Tbs oil or butter
- 11 onion, chopped
- 11 garlic clove, chopped
- 22 poblano peppers, diced
- 11 green bell pepper, diced
- 1/2 to 11/2 to 1 yellow bell pepper, diced
- 3stalks3 stalks of celery, diced
- 22 carrots, diced
- 1large1 large zucchini, chopped
- 1cup1 cup frozen corn (optional)
- 114 oz can1 14 oz can ground tomatoes
- 128 oz can1 28 oz can diced tomatoes, undrained
- 11 recipe (see below) taco seasoning, or 1 seasoning packet
- 1tsp1 tsp cocoa powder
- TACO SEASONING
- 1Tbs1 Tbs chili powder
- 1/4tsp1/4 tsp garlic powder
- 1/4tsp1/4 tsp onion powder
- 1/4tsp1/4 tsp oregano
- 1/2tsp1/2 tsp paprika
- 1 1/2tsp1 1/2 tsp cumin
- 1tsp1 tsp salt
- 1tsp1 tsp pepper
- 1/4tsp1/4 tsp crushed red pepper flakes

- 1/2 cup sugar
- 2 1/3 cups whole wheat flour
- CUSTARD:
- 6 eggs
- 1/3 cup all purpose flour (do not use whole wheat unless you don't mind altering the beautiful light yellow color of the bars)
- 1 1/4 cup sugar
- 2/3 cup freshly squeezed lemon juice
- Zest from 2 lemons
- Powdered sugar to sprinkle on bars before serving (optional)
