- 1/3 cup olive oil
- 3 1/2 tablespoons vinegar (suggestions: salad, red wine, or balsamic)
- 2 tablespoons grated Romano cheese
- 1 teaspoon granulated sugar
- 1 teaspoon freshly ground black pepper
- 3/4 teaspoon salt
- 1/4 teaspoon garlic powder

- 1 tablespoon canola oil
- 1 pound tomatillos (papery skins removed), chopped
- 1 onion (preferably white), chopped
- 1 poblano pepper, seeded and chopped
- 2 cloves garlic, chopped
- 3/4 teaspoon ground cumin
- kosher salt and black pepper
- 1 cup heavy cream
- 1 2- to 2 1/2-pound rotisserie chicken, meat shredded
- 1 14.5-ounce can diced tomatoes, drained
- 1 1/4 cups grated Monterey Jack (5 ounces)

- 1/2 cup celery, diced
- 4 cloves garlic, minced
- coarse salt and fresh black pepper
- 1/3 cup all-purpose flour
- 4 cups chicken broth
- 1 + 1/2 cups half & half
- 2 cups cooked white meat chicken, shredded or cut into small bites
- 1 pound potato gnocchi
- 3 cups fresh baby spinach, stems removed
- 1 tablespoon chopped fresh basil
- fresh grated Parmesan and/or Romano, for serving
