Cranberry Sauce

Combine the sugar and water in a large saucepan and bring to a boil
- 1 cup sugar
- 1 cup water
- 1 16 ounce bag fresh cranberries
- 1 cup chopped apple
- 1 cup chopped walnuts
- 1/2 cup raisins
- 1/4 cup Grand Marnier
- 1/2 orange, juiced (orange zest and little bits of orange can also be added if you choose)
- 1/2 lemon, juiced
- 1 tsp. cinnamon
- 1 tsp. nutmeg, freshly grated
1770 House Meatloaf

Preheat the oven to 350 degrees
- Garlic Sauce:
- 1 pound ground veal
- 1 pound ground pork
- 1 pound ground beef
- 1 tablespoon chopped, fresh chives, plus 1 teaspoon for the sauce
- 1 tablespoon chopped, fresh thyme leaves, plus 1 teaspoon for the sauce
- 1 tablespoon chopped, fresh Italian parsley, plus 1 teaspoon for the sauce
- 3 extra-large eggs, lightly beaten
- 2 1/2 cups Panko bread crumbs (1 1/3)
- 2/3 cup whole milk
- 1 tablespoons kosher salt
- 1 1/2 tsp. freshly ground black pepper
- 2 tbsp. Olive oil
- 2 stalks of celery, finely diced (1 1/2 cups)
- 1 large Spanish onion, finely diced (2 cups)
- 3/4 cup olive oil
- 2 cups chicken or beef stock (low sodium)
- 8 to 10 cloves garlic peeled
- 3 tablespoons butter, at room temperature

Tomato Crostini with Whipped Feta

For the whipped feta, place the feta and cream cheese in the bowl of a food processor fitted with the steel blade
- 6 ounces good feta, crumbled
- 2 ounces cream cheese, at room temperature
- 2/3 cup good olive oil, divided
- 2 tablespoons freshly squeezed lemon juice
- Kosher salt and freshly ground black pepper
- 2 tablespoons minced shallots (2 shallots)
- 2 teaspoons minced garlic (2 cloves)
- 2 tablespoons good red wine vinegar
- 2 pounds ripe heirloom or cherry tomatoes, 1/2-inch-diced
- 3 tablespoons julienned fresh basil leaves, plus extra for serving
- 20 to 25 (1/2-inch-thick) diagonal baguette slices, toasted
- 2 tablespoons toasted pine nuts
Tangy Caramel Bananas

- 1 small lime Fresh pineapple instead of bananas

- 1/2 cup soft brown sugar

Shrimp Bisque

- 1 pound large shrimp, peeled and deveined, shells reserved
- 4 cups seafood stock
- 3 tablespoons good olive oil
- 2 cups chopped leeks, white and light green parts (3 leeks)
- 1 tablespoon chopped garlic (3 cloves)
- Pinch cayenne pepper
- 1/4 cup Cognac or brandy
- 1/4 cup dry sherry
- 4 tablespoons (1/2 stick) unsalted butter
- 1/4 cup all-purpose flour
- 2 cups half-and-half

Creole Soup with Ham and Crawfish

Heat oil in head large pot over medium high heat
- 2 tbsp. olive oil
- 1 large onion, chopped
- 1 large red bell pepper, chopped
- 1 large green bell pepper, chopped
- 6 garlic cloves, chopped
- 1 6 ounce pkg. crimini (baby bella) mushrooms, sliced
- 2 cups fresh corn kernels ( about 2 ears)
- 1 1/2 tbsp. cajun seasoning
- pinch cayenne pepper
- 1 12 ounce bottle lager beer
- 2 14.5 ounce cans diced tomatoes, drained
- 2 8 ounce bottles clam juice
- 1/4 stick butter
- 1/4 cup all purpose flour
- 2 cups chopped tass ham or andouille sausage (about 12 ounces)
- 1 pound crawfish or peeled medium shrimp (frozen crawfish tails can be used thawed)
- 1 tbsp. whole grain mustard

- 2 tablespoons unsalted butter
- 6 chicken thighs (about 3 pounds), skin removed (about 2 1/2 pounds skinned)
- 8 mushrooms (about 6 ounces), washed and sliced
- 1 1/2 tablespoons all-purpose flour
- 1/2 cup dry white wine
- 1/4 cup water
- 3/4 teaspoon salt
- 3/4 teaspoon freshly ground black pepper
- 1/2 cup heavy cream
- 1 tablespoon coarsely chopped fresh tarragon (optional)
Sloppy Joes

Start by browning the ground beef in a large pot over medium-high heat
- 2 1/2 pounds ground beef
- 1 large green bell pepper, diced
- 1/2 large onion, diced
- 1 1/2 cups ketchup
- 5 cloves garlic, minced
- 2 tablespoons packed brown sugar
- 2 teaspoons chili powder, or more as needed
- 1 teaspoon dry mustard
- 1/2 teaspoon red pepper flakes, or more as needed
- Hot sauce, such as Tabasco
- Worcestershire sauce
- Salt and freshly ground black pepper
- 8 kaiser rolls
- 2 tablespoons butter, softened
- Chips or salad, for serving, if desired
