Sweet-Tart Lemon Cake, GF

Lemon lovers unite! This old-fashioned poke cake is so moist and lemony, it’s hard to resist
- ingredients:
- 1/2 1/2 1/2 cup butter or Earth Balance Buttery Sticks
- 2 2 2 cups sugar
- 3 3 1 large eggs + 1 yolk
- 3 3 1 tablespoons fresh lemon juice (about 1 lemon)
- 3 3 3 cups Jules’ Homemade All-Purpose Flour Blend
- 1 1 1 tablespoon baking powder
- 1/4 1/4 1/4 cup powdered milk of choice or almond meal
- 1/4 1/4 1/4 teaspoon salt
- 3/4 3/4 3/4 cup milk of choice (not skim or lite)
- 1 1 1 tablespoon grated lemon zest
- Lemon Syrup
- 1/2 1/2 1/2 cup sugar
- 1/2 1/2 1/2 cup water
- 1 1 1 lemon, sliced thin and seeded
- 1/4 1/4 1/4 cup lemon juice
- Lemon Buttercream Frosting
- 10 10 minutes
- 4 4 CUPS.
- to recommend using a stand mixer with a whisk attachment to make this recipe. A hand-mixer can do the job; just add extra time for whipping at the end of the recipe.

- 1 (10 3/4 ounce) can tomato soup

- 1 pound beets (about 6 medium), cleaned, tops removed
- 1 cup gluten-free chicken broth
- 3/4 cup unsweetened yogurt of choice or coconut milk (not coconut beverage)
- 3 tablespoons fresh lemon juice (about 1 lemon)
- 1 tablespoon sherry vinegar
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1 cup seeded, small-diced cucumber (about 1 large)
- 1/4 cup thinly sliced green onions (about 1 small bunch)

- 3 cups dried lentils
- 1 1/2 onion, thinly sliced
- 5 cups water
- 1 1/2 tsp chili powder
- 1/4 tsp turmeric
- 1/4 cup oil

- 1-4 cloves garlic, chopped (to taste)
