Mud Hen Bars

- 1/2 c. butter, room temp
- 1 c. granulated sugar

Chuck Roast in Foil (Cook's Country)

1. Adjust oven rack to lower-middle position and heat oven to 300 degrees
- You will need an 18-inch-wide roll of heavy-duty aluminum foil for this recipe.
- Rub
- 3 tablespoons cornstarch
- 4 teaspoons onion powder
- 2 teaspoons light brown sugar
- 2 teaspoons Salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon instant espresso powder
- 1 teaspoon dried thyme

- 1-1/2 cups warm low-fat milk
- 1/4 cup turbinado sugar
- 1/4 cup unsalted butter, melted

Mixed Berry Scones

- GLAZE:
- 1 3/4 cups (8 3/4-ounces) frozen mixed berries (I buy mine at Trader Joe's)
- 3 tablespoons confectioners' sugar
- 3 cups (15-ounces) all-purpose flour
- 12 tablespoons unsalted butter, cut into 1/2-inch pieces, chilled
- 1/3 cup (2 1/3-ounces) granulated sugar
- 1 tablespoon baking powder
- 1 1/4 teaspoon salt
- 3/4 cup plus 2 tablespoons whole milk
- 1 large egg plus 1 large yolk
- 2 tablespoons unsalted butter, melted
- 1 tablespoon honey
Roasted Chicken Broth

I used this broth to make my German Griessnockerl Suppe (Semolina Dumpling Soup)
- 6 organic chicken legs*
- 1 onion, cut into quarters (no need to peel)
- 3 medium-sized carrots, cut into large pieces
- 3 stalks celery, cut into chunks
- 1 garlic clove (no need to peel)
- 6 to 8 stalks fresh parsley
- Salt & pepper
- Olive oil
- 8 cups water
Amaretto-Cranberry Kiss Cocktail

One of my favorite cocktails is a Cape Cod (Vodka & Cranberry Juice with a lemon twist)
- 1 cup cranberry juice cocktail
- 1/4 cup amaretto
- 2 tablespoons fresh orange juice (don't use concentrate)

- Vegetable oil, for brushing
- 4 envelopes unflavored gelatin (3 tablespoons plus 1 1/2 teaspoons)
- 3 cups granulated sugar
- 1 1/4 cups light corn syrup
- 1/4 teaspoon salt
- 2 teaspoons pure vanilla extract
- 1 1/2 cups confectioners' sugar (3/4 cup cornstarch and 3/4 cup confectioner's sugar
- 3/4 cup water
- 3/4 cup ice water
Buttery Almond Pound Cake with Almond Glaze

In a large bowl, whisk together cake flour, baking powder and salt
- 3 cups (12 oz) cake flour, more for dusting (do not substitute)
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 2-1/2 sticks unsalted butter, softened
- 2-1/2 cups granulated sugar
- 6 large eggs, room temperature
- 1 Tablespoon pure almond extract
- 1 cup whole milk (do not substitute), room temperature
- 2 cups confectioners' sugar
- 2 Tablespoons milk
- 1 Tablespoon almond extract
- 1/3 cup slivered almonds for garnish

- 3 cups fresh boysenberries (1 1/2 pints or 675 mil) or frozen unsweetened boysenberries, partially thawed
- 3/4 to 1 cup sugar
- 1 teaspoon fresh lemon juice
- 1 Tbsp light corn syrup

Chocolate Bliss Cake with Fluffy 7-Minute Frosting

The coffee that is added to this easy cake recipe intensifies the flavor of the chocolate
- CAKE:
- 1 3/4 cup all-purpose flour
- 2 cups sugar
- 3/4 cups unsweetened cocoa
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 large eggs
- 1 cup black coffee, cooled (I used a dark roast coffee. You can't taste the coffee, but the chocolate is deeper in flavor and richness with this ingredient)
- 1 cup buttermilk (or 1 tablespoon lemon juice with milk to equal 1 cup; or 1 tablespoon vinegar with milk to equal 1 cup)
- 1/2 cup canola oil
- 1 teaspoon vanilla extract
- FROSTING:
- 2 large egg whites
- 1 cup sugar
- 1/4 teaspoon cream of tartar
- 1/3 cup water
- 1/8 teaspoon salt
- 1 teaspoon vanilla extract
