Slow-Cooked Whole Carrots

Use carrots that measure 3/4 to 1 1/4 inches across at the thickest end
- 3 cups water
- 1 tablespoon unsalted butter
- 1/2 teaspoon salt
- 12 carrots (1-1/2 to 1-3/4 pounds), peeled

- 1/3 cup pine nuts, toasted
- 1 shallot, minced
- 1 tablespoon sherry vinegar
- 1 tablespoon minced fresh parsley
- 1 teaspoon honey
Turkey - Dry Brined, slow roasted, with Herb Salt

- 2 tablespoons kosher salt
- 1 tablespoon freshly ground pepper
- 1/2 tablespoon dried thyme
- 1/2 tablespoon dried savory
- 1 teaspoon dried sage
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried marjoram
- 2 teaspoons finely grated lemon zest
- One 14-pound organic turkey, rinsed and patted dry
- 1 onion, quartered

Linguine with Walnut-Sage Pesto

- 3 pounds russet potatoes (about 4 large potatoes), peeled, ends and sides squared off, and cut lengthwise into 1/2 inch by 1/2-inch fries
- 3 quarts peanut oil (or canola oil), plus 1/4 additional cup
- 1-1/2 cups all-purpose flour
- 1/2 cup cornstarch
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon paprika
- 1/8 teaspoon ground black pepper
