Cranberry Orange Muffins

Directions Preheat the oven to 375 degrees F
- 1 cup dried cranberries
- 1/4 cup fresh orange juice
- 2 cups unbleached all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon fine salt
- 1/2 cup unsalted butter, softened, plus more for preparing the muffin tin
- 1 teaspoon grated orange zest
- 2/3 cup granulated sugar, plus up to 1 tablespoon for topping the muffins, if desired
- 2 large eggs, at room temperature
- 1/2 cup milk

MOCHA-ORANGE CHEESECAKE

For Crust: Preheat oven to 325°F
- Crust
- 21 Pepperidge Farm Orange Milano cookies (10 ounces) -- broken into pieces
- 1/4 cup unsalted butter -- (1/2 stick) cut into 1/2-inch pieces
- 1 1/2 teaspoons instant espresso powder
- Filling
- 4 ounces bittersweet (not unsweetened) or semisweet chocolate -- chopped
- 2 packages cream cheese -- (8 ounce) room temperature
- 3/4 cup sugar
- 1/3 cup frozen orange juice concentrate -- thawed
- 2 tablespoons coffee liqueur
- 2 tablespoons Grand Marnier or other orange liqueur
- 2 tablespoons instant espresso powder
- 3 large eggs
- Topping
- 1 1/2 cups sour cream
- 6 tablespoons powdered sugar -- (packed)
- 4 teaspoons instant espresso powder
- Orange slices (optional)
- Chocolate curls (optional)

Chocolate Orange Nanaimo Bars – a new recipe with a twist on the classic Canadian treat, the Nanaimo bar
- For the Base Layer
- 3/4 cup butter
- 1/3 cup sugar
- 8 tbsp cocoa
- 2 beaten eggs
- 2 1/4 cups graham cracker crumbs
- 3/4 cup fine or medium unsweetened coconut
- 1/2 cup finely chopped walnuts
- For the the Orange Frosting Filling
- 3/4 cup butter
- 3 tbsp frozen orange juice concentrate
- zest of one small orange finely minced
- 3 cups icing sugar i.e., powdered sugar or confectioners sugar
- 1/4 cup custard powder
- 1 tbsp milk or enough to get it to a very thick but spreadable consistency
- For the Chocolate Topping
- 1 cup chocolate chips
- 2 tbsp butter

- FILLING:
- 1 cup dry bread crumbs
- 1/4 cup butter, melted
- 1 tablespoon butter
- 1/2 pound baby portobello mushrooms, chopped
- 1 garlic clove, minced
- 1/3 cup chopped walnuts
- 1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
- 1 teaspoon reduced-sodium soy sauce
- 1/4 teaspoon white pepper
- 2 packages (8 ounces each) cream cheese, softened
- 1/2 cup plain Greek yogurt
- 2 large eggs, lightly beaten
- Assorted crackers, baguette slices or sliced apples
Kale & Quinoa Patties

Quinoa is cooked in typical fashion
- 1 cup uncooked quinoa
- 2 cups of broth (veggie of chicken will work well)
- 4 stems of kale, steamed and chopped (about 2 cups chopped up)
- 1 cup panko breadcrumbs
- 4 eggs, whisked
- 4 spring onions, thinly sliced
- 1/3 cup Parmesan cheese
- 4 cloves garlic, finely minced
- 1 teaspoon salt
- freshly ground pepper
- oil for the skillet (I use avocado oil but olive or coconut oil will also work well!)
- optional for topping: avocado, cilantro, extra parmesan cheese
