Thin Mint Brownies

1. Preheat oven to 350 degrees
- 4 ounces unsweetened chocolate; coarsely chopped
- 3/4 cup butter, cut into large cubes
- 1 1/4 cups white sugar
- 3 large eggs
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon peppermint extract
- 1/4 teaspoon fine grain salt
- 1 cup all-purpose flour
- 10 Thin Mint Cookies, roughly chopped
Caramel Mocha Milkshake

Brew coffee, then set aside in the fridge to cool
- 1 cup (8oz.) strong brewed coffee, such as Millstone House Blend
- 2-3 cups good quality chocolate ice cream
- salted caramel sauce

Spicy Perogy Pizza

For the dough: 1. In a medium bowl, thoroughly blend the flour, yeast, and salt
- Pizza Dough:
- 3 3/4 cups all-purpose flour, plus more for shaping the dough
- 1/4 tsp active dry yeast
- 2 tsp fine sea salt
- 1 1/2 cups water
- 3-4 medium russet (baking) potatoes, scrubbed but not peeled, thinly sliced
- 1 medium jalapeno pepper, seeded and diced (about 1/4 cup diced)
- Drizzle of vegetable or canola oil
- Salt and freshly ground pepper
- 1/3-1/2 cup sour cream (plus more for garnish)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup diced, cooked bacon (about 5 slices)
- 1/2 cup diced fresh green onion
The Painkiller Cocktail

In a cocktail shaker, combine rum, pineapple juice, orange juice, coconut cream and 3 ice cubes
- 2 oz. dark rum
- 4 oz. pineapple juice
- 1 oz. orange juice
- 1 oz. sweetened coconut cream (I used Coco Lopez)
- 5 ice cubes
- freshly grated nutmeg

- 1 1/2 cups whole milk
- 1 1/2 cups heavy cream
- 2/3 cup Dixie Crystals Dark Brown Sugar
- 4 egg yolks
- 3/4 cup pumpkin puree
- 1 tablespoon cinnamon
- 1 teaspoon nutmeg
- 3/4 teaspoon ginger
- 1/4 teaspoon cloves
- 1/2 teaspoon salt
- 2 cups gingersnap cookies, broken into pieces
- Crumbled gingersnaps, for topping (optional)
Chocolate Graham Cracker Cake

For the cake: Preheat oven to 375F
- For the cake:
- 1/2 cup butter
- 1 cup sugar
- 3 eggs, seperated
- 2 cups graham cracker crumbs
- 2 tsp. baking powder
- 3 TBSP cocoa
- 1 tsp. salt
- 1 cup milk
- 1 tsp. vanilla extract
- 1/2 cup chopped nuts
- For the Chocolate Sauce:
- 1 cup Whipping cream
- 2 TBSP Sugar
- 4 oz Bittersweet chocolate, chopped
- 1 TBSP Unsalted butter
Korean BBQ Beef (Slow Cooker)

Place all vegetables on bottom of slow cooker, followed by beef
- 3 lbs boneless chuck beef
- 1 1/2 tsp kosher salt
- 1-2 tsp freshly ground black pepper
- 3 TB white sugar
- 1 TB garlic powder
- 7 medium carrots, peeled and sliced
- 2 medium onions, sliced or chopped
- 1 pkg (13oz) Campbell's Slow Cooker Sauces (Sweet Korean BBQ)
- chopped scallions for garnish
Samoa Layer Cake

Preheat oven to 350. Spray two 8 or 9 inch pans with nonstick spray and line the bottom with parchment paper
- CAKE:
- 2 3/4 cups cake flour
- 2 1/2 tsp baking powder
- 2 sticks (1 cup) salted butter, slightly softened
- 1 3/4 cup granulated sugar
- 4 large eggs at room temperature (I often place them in a bowl of warm tap water if I forget to get them out)
- 1 Tablespoon vanilla
- 1 1/2 cups whole milk
- FILLING:
- 3 cups toasted coconut, divided
- 2 (11 oz) bags caramel bits (or 2 bags wrapped caramels, 11 oz each)
- 1/4 cup heavy cream
- FROSTING:
- 1 stick salted butter, slightly softened
- 1 tsp vanilla
- 1 1/2 cups powdered sugar
- 1/4 cup dark cocoa powder (I used Hershey Special Dark)
- 3 TBS warm water
Ginger Bourbon Cider

- 1 ounce bourbon
- 1 ounce Calvados
- 2-3 ounces apple cider
- a few shakes of orange, or classic, bitters
- ginger beer
- pinch of ground cinnamon

prepare the ice cream: Add the milk, cream, and vanilla to a saucepan on medium heat
- 1 cup whole milk
- 1 cup heavy cream
- splash of pure vanilla extract
- 3/4 teaspoon ground cardamom
- 6 egg yolks
- 5 ounces granulated sugar
- 2 cups roasted salted pistachios, shelled
- 1 tablespoon unsalted butter, melted
- 3 tablespoons brown sugar
- 1 1/2 tablespoons pure maple syrup
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground cayenne pepper
