Baked Cheesy Sausage Penne

Super cheesy penne pasta noodles and sausage tossed and baked in a creamy garlic white sauce!
- 3 cups cooked penne noodles
- 1 1/2 pounds Italian sausage, sliced
- 1 7-ounce can roasted red peppers, drained (may sub sundried tomatoes)
- 3 ounces butter
- 4 tablespoons flour
- 2 1/2 cups milk (I used fat free half and half)
- 1 teaspoon each salt and pepper
- 1 1/2 teaspoon garlic powder
- 1 1/4 cups grated parmesan cheese, divided
Mustard Aioli-Grilled Potatoes with Fine Herbes

- 1/2 cup mayonnaise
- 2 garlic cloves, smashed to a paste
- 1 heaping TBSP Dijon mustard
- 1 heaping TBSP whole grain

Banana Pudding Cupcakes

Cake: Preheat the oven to 350°F
- Cake:
- 1 1/2 cup AP flour
- 1 1/2 cup cake flour
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1 1/4 cup softened butter [2 1/2 sticks]
- 2 cups granulated sugar
- 2 tsp pure vanilla extract
- 1/4 tsp almond extract
- 4 large eggs
- 1 cup buttermilk or whole milk
- Filling:
- 1 [8 oz] container spreadable light cream cheese, softened
- 1 [14 oz] can sweetened condensed milk
- 3/4 cup whole milk
- 1 box [3.4 oz] instant vanilla pudding
- 1 [16 oz] frozen whipped topping, thawed & divided
- 3 bananas
- 1 tsp pure vanilla extract
- 1 cup crushed vanilla wafer crumbs for garnishing
Garlic and Sun-Dried Tomato Corn Muffin

Preheat the oven to 375 degrees F
- 2 (8 1/2-ounce) packages corn muffin mix (recommended: Jiffy)
- 2 cups frozen whole kernel corn, thawed
- 3 garlic cloves, minced
- 2/3 cup diced sun-dried tomatoes (from an 8-ounce jar)
- 2/3 cup buttermilk
- 2/3 cup sour cream
- 2 large eggs
Coconut Water Popsicles

Place a thinly sliced strawberry at the bottom of each popsicle mold or paper cup
- Fresh or frozen blueberries
- Fresh strawberries, sliced
- 1 cup coconut water (Lemonade also works)

- TANDOORI MASALA:
- 1/2 cup yogurt

- 12 sheets phyllo dough, thawed
- 1 cup shredded mozzarella cheese
- 3 large Roma tomatoes, thinly sliced
