Chocolate Dipped Coconut Macaroons

- 6 cups sweetened shredded coconut (14 ounces)
- 30-35 whole almonds (if desired)

In a large nonstick saucepan, combine the salsa and allspice
- 1 cup salsa
- 1 pinch allspice
- Two 15-to-19-ounce cans black beans, drained and rinsed
- 3 cups low-sodium chicken broth

- 1 whole cooked rotisserie chicken, shredded well
- 1 whole round of Cacique Queso Quesadilla Cheese, grated
- Salsa and fresh cilantro for garnishing
Monkey Bread Cheesecake

For the Monkey Bread Crust: Add the cinnamon and sugar to a gallon size freezer bag
- Monkey Bread Crust:
- 1 can (16 oz) refrigerator biscuits (I used Grand’s)
- 1/2 cup granulated sugar
- 2 tsp. ground cinnamon
- Cheesecake filling:
- 2 pkg. (8 oz. each) cream cheese, at room temperature
- 1 cup granulated sugar
- 1 TBSP vanilla extract (I used Rodelle)
- 2 TBSP flour
- 3 eggs
- 1 tsp. ground cinnamon
- Sauce:
- 1 3/4 cups chopped pecans
- 1/2 cup unsalted butter, I used Plugra
- 3/4 cup (packed) dark brown sugar
- 3/4 cup heavy cream
- 1/3 cup honey
- 1/4 tsp. salt
- Preheat oven to 350 degrees F.
- Grease a 9-inch Springform pan.
Roasted Strawberry Vanilla Bean Frozen Yogurt

- 1 lb (455 grams) strawberries, hulled and sliced
- 1 cup (200 grams) granulated sugar
- 1 vanilla bean, sliced open lengthwise
- 1 1/2 cup ( grams) plain greek or regular yogurt
Chocolate Peanut Butter Banana & Cookie Chunk Ice Cream

In a small bowl, mix 2 TBSP
- 8 oz. good-quality semi-sweet chocolate, chopped
- 3 1/2 cups half and half
- 1 TBSP. plus 1 tsp. cornstarch
- 2 ounces cream cheese, softened (about 1/4 cup)
- 1/4 cup sugar
- pinch salt
- Mix-ins: 1 banana (chopped small), 1/2 cup chocolate cookies* (chopped), and about 1/2 cup peanut butter
- I used these cookies (minus the centers) because I had some left over, but you can use any homemade or store-bought chewy chocolate cookies.
