Coconut Bundt Cake with White Chocolate-Coconut Glaze

1. Make the Cake: Preheat oven to 350 degrees F
- For the Cake:
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon kosher salt
- 1 cup unsalted butter, at room temperature
- 2 1/2 cups granulated sugar
- 2 eggs
- 2 egg yolks
- 2 tablespoons coconut extract
- 2 teaspoons vanilla extract
- 1 1/3 cups unsweetened coconut milk
- For the Glaze:
- 4 to 6 tablespoons coconut milk
- 1/2 teaspoon coconut extract
- 1/2 teaspoon vanilla extract
- 2 cups powdered sugar, sifted
- 6 ounces white chocolate, melted and still warm
- Shredded coconut, toasted, to garnish

- 1/4 cup olive oil
- Half of a package (1 1/2 pounds) of Mozzarella and Roasted Garlic Chicken Sausage from Sam's Club
- 2 large yellow onions, chopped
- 1 large carrot, chopped
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried marjoram
- 3 cups vegetable or chicken stock
- 1 cup rinsed Brown Lentils
- 1/4 cup chopped fresh parsley
- 1 pound can diced tomatoes
- 1/4 cup cream sherry
- 2/3 cup grated swiss cheese
Cheeseburger Soup

Preheat oven to 400 degrees F
- 3 hamburger buns, diced into 1-inch cubes
- 4 slices bacon, diced
- 1 tablespoon olive oil
- 8 ounces ground beef
- 1/4 cup unsalted butter
- 2 cloves garlic, minced
- 1 onion, diced
- 2 stalks celery, diced
- 2 carrots, grated
- 1 teaspoon Worcestershire
- 3 tablespoons all-purpose flour
- 2 1/2 cups chicken broth
- 2 cups milk, or more, as needed
- 2 russet potatoes, peeled and cubed
- 1 1/2 cups shredded cheddar cheese

- Chocolate Ganache:
- 250 g butter, chopped
- 200 g good-quality dark chocolate, coarsely chopped
- 11/4 cup freshly brewed strong Harris coffee
- 11/4 cup castor sugar (or more depending on the strength of the coffee you are using)
- 2 eggs, lightly whisked
- 300 g (2 cups) plain flour
- 2 teaspoons baking powder
- Chocolate ganache, for icing (recipe below)
- 10-12 vanilla flavoured marshmallows, to decorate
- 200 ml pure (thin) cream
- 200 g good-quality dark chocolate, chopped

- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder

For the sage hollandaise sauce, whisk the eggs yolks with the water and salt in a small pot for 1 minute
- Sage Hollandaise Sauce:
- 3 egg yolks
- 1 tablespoon water
- 1/4 teaspoon salt
- 3/4 teaspoon dry rubbed sage
- 1 cup unsalted cultured butter, cut into individual tablespoons
- 1/4 cup freshly squeezed lemon juice
- Eggs Benedict with Manchego, Tomatoes, & Proscuitto:
- 4 eggs
- splash of white vinegar
- 2 Cobblestone Bead Co. original English muffins, cut in half and toasted
- 4 slices proscuitto
- 2 ounces manchego cheese, cut into 4 slices
- 4 tomato slices
- 4 fresh sage leaves

- 1 (8-ounce) block cream cheese, softened
- 4 ounces mascarpone cheese, softened
- 6 ounces freshly grated sharp white cheddar cheese
- 1/2 cup sliced, toasted almonds
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup pomegranate arils
