Chicken & Chorizo Tortilla Stacks

Preheat the oven to 400 degrees F
- 3 small tortillas, about 4.5 inch wide
- 2 tablespoons olive oil
- 1 1/2 cups diced cooked chicken
- 1 package (9oz) of Cacique Beef Chorizo
- Red Salsa
- 2 cups grated Cacique Enchilada Cheese
- 1 large egg
- Fresh cilantro, chopped
Singapore Street Noodles

Place the rice noodles into a large mixing bowl
- 12 ounces rice vermicelli noodles, also known as rice sticks
- 3 tablespoons refined peanut oil
- 4 ounces boneless skinless chicken thighs, cut into 3/4 inch cubes
- 2 slices smoked bacon, siced horizontally into 1/4 inch wide strips
- 4 ounces boneless pork loin, thin cut and sliced into 1/4 inch wide strips
- 4 ounces raw shrimp, shelled and deveined, 26-30 count
- 1 small yellow onion, halved sliced
- 1 medium red pepper, stem and seeds removed, chopped
- 1 tablespoon fresh ginger, peeled and diced
- 1 tablespoon garlic, peeled and diced
- 1 jalapeño, deseeded and diced
- 1 tablespoon curry powder
- 1 tablespoon granulated sugar
- 4 tablespoons tamari soy sauce, naturally gluten-free, divided
- 2 tablespoons fish sauce, divided
- 2 tablespoons rice vinegar, divided
- 1 teaspoon crushed red pepper flakes
- 4 scallions, sliced
- 1/2 cup fresh basil leaves, sliced thinly across the leaf

Lemon Lover's Dream Cake

Begin by making the lemon cake layers
- Lemon Cake Layers:
- 4 large eggs
- 3/4 cup flour
- 1 1/2 teaspoons cornstarch
- 1/2 cup plus 1/4 cup granulated sugar
- 1 1/2 teaspoons baking powder
- pinch salt
- 3 tablespoons vegetable oil
- 1 tablespoon lemon juice plus 3 tablespoons water
- 1 tablespoon grated lemon peel
- 1 teaspoon vanilla sugar
- Lemon Curd:
- 2/3 cup granulated sugar
- 2 large eggs
- juice and peel from 2 lemons
- 1/4 cup unsalted butter, at room temperature, cut into cubes
- Lemon Cream:
- 1 1/4 cups whipping cream
- 2-3 tablespoons granulated sugar
- 6 tablespoons lemon curd (see recipe above)
Easy Arancini

- 1 ounce mixed dried wild mushrooms
- Butter
- Flavorless oil, such as peanut
- 1 small onion or large shallot, peeled and finely diced
- 1 garlic clove, peeled and crushed
- 1 1/3 cups risotto rice
- 1/2 cup dry white wine
- 2 cups vegetable or chicken stock
- 1 ounce Parmesan cheese, grated
- Sea salt and freshly ground black pepper
