Heat the olive oil in a large skillet over high heat
- 2 tablespoons extra-virgin olive oil
- 5 cloves minced garlic
- 8 cups thinly sliced onions
- Gray salt
- 1 tablespoon fresh thyme leaves, chopped
- 1/4 cup sherry vinegar
- 1 1/2 cups dark beer (recommended: Guinness)
- 6 cups beef stock
- 6 slices country bread cut 1/2-inch thick, toasted
- 1/2 pound Irish Cheddar, sliced thin
Chocolate Chip Banana Bread French Toast Muffins with Cinnamon Streusel

Grease a 12 cup muffin tin with cooking spray, butter or canola oil
- Cinnamon Streusel:
- 1 1/2 cups milk
- 4 large eggs
- 3 very ripe bananas, mashed
- 2 tablespoons honey
- 1 tablespoons vanilla
- 2 tablespoons ground flax seed meal (optional)
- 1 teaspoon cinnamon
- 8-10 cups cubed Challah Bread

Simple Baked Italian Oregano Meatballs

- 1 pound ground spicy Italian Sausage (may use ground beef if preferred)
- 2 thick slices soft whole grain or white bread
- 1 egg

Rosemary Flatbread with Goat Cheese

- 2-3 tablespoons olive oil, divided
- 1 medium yellow onion, peeled and thinly sliced
- 5-6 campari tomatoes (cocktail tomatoes), whole or halved
- kosher salt and freshly ground black pepper
- 5 ounces goat cheese, at room temperature
- 2 teaspoons fresh rosemary, minced and divided
- 1 teaspoon chives, minced
- 1 teaspoon Italian flat leaf parsley, minced
- 1/8 teaspoon garlic salt
- 6 ounces jarred roasted red bell pepper, about 1/2 cup

- For the Brownies:
- 1 cup flour
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt

- 3/4 cup sugar

- 2 cups apples, peeled and finely chopped (I used Ginger Gold but Golden Delicious or Granny Smith work too)
- 1/3 cup chopped pecans + 1/4 cup whole pecans
- 16 caramels
- 2 tablespoons cream
- For the toppings:
- 2-3 tablespoons mini chocolate chips
- 7 caramels
- 1 tablespoon cream
Date Night Mushroom Pasta with Goat Cheese

PASTA: Cook the pasta according to package directions
- 16 16 16 ounces uncooked whole wheat farfalle pasta

- 1 1 1 teaspoon salt
- 1 1 1 cup chicken or vegetable broth (as needed)
