- Chimichurri Sauce:
- 2 1/2 cups cooked quinoa
- 1 pint of cherry tomatoes
- 1/2 medium cucumber, peeled, quartered and chopped- seeds removed
- 1 heaping cup of kalamata olives, pitted and sliced in half
- 4 tablespoons chimichurri sauce
- salt
- 1 scant cup of wide leaf parsley, finely chopped
- 1.5 full cups of cilantro, finely chopped
- 3 large cloves of garlic, crushed
- 5 tablespoons finely minced shallot
- 2 tablespoons fresh lemon juice
- 1 1/2 cups high quality olive oil
- 1/4 cup red wine vinegar
- salt
- pepper
Homemade Pizza + Mustard + New York Strip

For the pizza dough: I often double of triple this recipe and keep the extra dough in the freezer
- For the Pizza Dough:
- 1 1/2 tsp. dry active yeast
- 3/4 cup warm water
- 2 tsp. sugar
- 2 - 2 1/2 cups bread flour
- 2 Tb. olive oil + extra for bowl
- 1 1/2 tsp. sea salt
- 8 oz. crimini mushrooms, sliced thin
- 3-4 shallots, sliced thin (1 1/4 cup)
- 2 Tb. butter
- 1 Tb. olive oil
- 1/4 cup spicy whole grain mustard
- 8 oz. new york strip steak, sliced thin against the grain
- 1/3 cup parmesan cheese
- 1/4 cup chopped scallions
- Salt and pepper
Ham and Potato Corn Chowder - Oh Sweet Basil

Make sure you've started by boiling the potatoes until tender
- 4 Cups Russet Potatoes, chopped and boiled until tender
- 6 Tablespoons Butter, unsalted
- 1 Small Onion, chopped fine
- 1/3 Cup Flour
- 2 1/2 Cups Chopped Ham
- 2 Cups Half and Half
- 2 Cups Heavy Cream
- 4 Cups Milk
- 1 Cup Vegetable or Chicken Broth
- 2 Bay Leaves
- 3 Cups Corn
- 1 Teaspoon Oregano
- 1/4 Teaspoon Nutmeg
- Salt and Pepper to taste
Spicy Garlic Sriracha Shrimp and Broccoli Stir Fry

Mix the salt and pepper together and sprinkle over the shrimp, tossing them to coat
- 1/4 teaspoon Kosher Salt
- 1/4 teaspoon freshly ground Black Pepper
- 1 pound deveined, shelled raw Shrimp (26-30 count)
- 2 tablespoons Sunflower Oil
- 5 medium Garlic Cloves, diced
- 2 tablespoons Sriracha Sauce
- 1 tablespoon freshly squeezed Lime Juice
- 1 large Shallot, thinly sliced with sliced divided into ring
- 4 cups Broccoli Florets (_Note: if large in size either cut them in half or make an X with a knife in the stem to aid to hasten cooking time_)

Spinach and Feta Pies

In a large fry pan with high sides, melt 1 tablespoon butter over medium heat
- 1 (8-ounce) sleeve frozen phyllo dough, thawed at room temperature
- 1 pound fresh spinach leaves
- 2 tablespoons plus 1/2 cup butter, divided
- zest and juice of one lemon
- 1 shallot, chopped
- 2 eggs, beaten
- 1/2 cup panko bread crumbs
- 1 1/2 cups Feta cheese, cubed (I prefer it in 1/2-inch cubes for maximum Feta flavor)
- 1 cup pine nuts, toasted
- sea salt flakes
Salmon + Greens Asian Noodle Bowls

In a medium sized pot, bring the vegetable broth, ginger, and garlic to a boil
- Optional Garnish:
- 2 quarts vegetable broth
- 4 inch piece fresh ginger, lightly smashed with a pan or meat tenderizer
- 4 large cloves garlic, peeled
- 12 ounces glass noodles
- 3 cups snow pea pods
- 3 teaspoons sunflower or canola oi
- 4 boneless, skinless salmon filets
- 2 cups watercress leaves and tender stems or arugula
- 1 cup pea shoots or bean sprouts
- 1 yellow bell pepper, stem and seeds removed, thinly sliced
- 6 green onions, root ends trimmed, thinly sliced, 1 tablespoon reserved
- 1 cup very thinly sliced shiitake mushrooms or beech (enoki) mushrooms

Spicy Caramelized Fennel Rigatoni Carbonara

Tear the ciabatta into chunks and place in a food processor
- 1 3" slice stale ciabatta bread (I prefer roasted garlic ciabatta)
- 1 tablespoon olive oil
- 2 bulbs fennel, stalks and fronds included
- 1 teaspoon original Sriracha sauce, plus more to taste
- 1 lb rigatoni pasta
- 2 large eggs
- 1 cup mozzarella cheese, shredded
- Kosher salt and pepper, to taste
Raspberry Mojito

This delicious cocktail is a spin on the classic Cuban mojito with an addition of a raspberry-infused simple syrup
- 1 cup sugar
- 1 cup water
- 2 cups raspberries
- 2 lime slices, cut into wheel shape
- 1 sprig fresh mint
- 2 ounces or 1/4 cup white rum
- 1/2 ounce raspberry liqueur
- Ice cubes, as needed
- Raspberry, for garnish
No Bake Samoa Cheesecakes

Caramel: Gather all of your ingredients and have them nearby ready to add to the mixture as needed
- Caramel Sauce:
- 1 cup granulated sugar
- 1/4 cup + 2 Tbsp water
- 1/4 cup salted butter, diced into 1 Tbsp pieces
- 1/2 cup heavy cream
- 1/2 tsp fine sea salt or 3/4 tsp Maldon, more to taste if desired
- Coconut layer:
- 1 cup sweetened coconut, toasted and slightly crushed
- Chocolate ganache layers:
- 1/3 cup semi-sweet chocolate chips
- 1/3 cup milk chocolate chips
- 1/2 cup cup heavy cream
- Shortbread crust:
- 1 cup crushed shortbread cookies (I recommend using Lorna Doone, about 19 cookies)
- 2 Tbsp unsalted butter, melted
- Cheesecake filling:
- 1 1/4 cups heavy cream
- 3/4 cup + 2 Tbsp powdered sugar
- 12 oz cream cheese, softened (don't melt)
- 1/2 tsp vanilla extract
