Fresh Strawberry Cake

Preheat oven to 350 degrees
- Cake:
- 3 cups (370g) cake flour
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1 cup (8 oz) unsalted butter, softened
- 1 3/4 cup (390g) granulated sugar
- 3 large eggs
- 2 large egg yolks
- 1 1/4 cups milk (anything but skim)
- 2 tsp vanilla extract
- Strawberry Cream Cheese Whipped Cream:
- 3 cups heavy cream
- 1 cup (125g) powdered sugar, divided
- 8 oz cream cheese, left at room temperature until partially softened (about 20 - 30 minutes)
- 1/2 tsp vanilla extract
- 1 1/2 lbs strawberries, hulled and sliced into pieces slightly under 1/2-inch
- Sliced strawberries for decorating (optional)
Pasta Bolognese

Heat 1 tablespoon of the olive oil in a large, heavy saucepan until shimmering
- 1/4 cup extra-virgin olive oil
- 1 medium onion, finely diced
- 1 medium carrot, finely diced
- 1 medium celery rib, finely diced
- 2 ounces thickly sliced pancetta, finely diced
- 1/2 pound ground beef
- 1/2 pound ground veal
- 1/4 pound ground pork
- 2 large garlic cloves, chopped
- 3/4 cup dry white wine
- One 28-ounce can peeled Italian tomatoes—seeded and finely chopped, juices reserved
- 1 cup chicken stock or canned low-sodium broth
- 1/2 teaspoon dried thyme
- 1 bay leaf
- Salt and freshly ground pepper
- 1/4 cup heavy cream
- 2 pounds penne rigate
- Freshly grated Parmesan, for serving
Roasted Blueberry Graham Cracker Crumble Frozen Yogurt

Preheat the oven to 450 degrees F
- 1 cup fresh blueberries
- 1/2 cup sugar, divided
- 1/3 cup brown sugar
- 6 tbs unsalted butter, melted and cooled
- pinch of salt
- 1 sleeve whole graham crackers, about 9
- 2 lbs Vanilla Greek Yogurt

- 3 oz. Hendricks gin
- a good squeeze of fresh orange juice
- a big splash of ginger ale
- a splash or two of sparkling water

New York Crumb Cake

Made completely from scratch, this buttery cake is topped with a thick layer of crumb that’s simply irresistible
- For the Crumb Topping:
- 1/3 cup (66 grams) granulated sugar
- 1/3 cup (66 grams) dark brown sugar
- 3/4 teaspoon ground cinnamon
- 1/8 teaspoon table salt
- 1/2 cup (113 grams) unsalted butter, melted and still warm
- For the Cake:
- 1 3/4 cups (198 grams) cake flour
- 1 1/4 cups (142 grams) cake flour
- 1/2 cup (99 grams) granulated sugar
- 1/4 teaspoon baking soda
- 1/4 teaspoon table salt
- 6 tablespoons (85 grams) unsalted butter, cut into 6 pieces, softened but still cool
- 1 egg
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1/3 cup buttermilk
- Powdered sugar, for dusting
No Bake Strawberry Shortcake Dessert

Whisk pudding, milk, and vanilla in a medium sized bowl
- 1 box (3.4 oz) vanilla instant pudding
- 1 1/2 cups nonfat milk
- 1 teaspoon vanilla extract
- 25 Golden Oreos (or another vanilla flavored cookie/graham cracker)
- 2 tablespoons unsalted butter, melted
- 1 1/2 containers (8 ounces each) Cool Whip Topping (see note about using fresh whipped cream)
- 1 pound fresh strawberries, hulled and sliced and patted dry
Chicken Pho

In a large stock pot, bring chicken stock to a boil over high heat
- Garnishes:
- 3 quarts chicken stock (homemade if possible)
- 1 teaspoon ground ginger
- fish sauce, for seasoning
- 1 (16 oz) package dried rice vermicelli noodles, cooked according to package directions
- 4 cups cooked & shredded chicken
- 1 bunch cilantro, chopped
- 1 bunch green onions, minced
- cilantro, chopped
- crispy fried shallots
- mung bean sprouts
- limes, cut into wedges
- jalapeños, thinly sliced
Obsessively Good Avocado Cucumber Salad

Combine cucumber, scallions and avocado in a bowl
- 3/4 to 1 pound seedless cucumber, washed and chopped into chunks
- 2 thin or 1 regular scallions, thinly sliced
- 1 large avocado, pitted and diced
- 2 tablespoons mayonaise
- Juice of half a lime, plus more to taste
- Salt and hot sauce (we used Sriracha) to taste
- Chopped cilantro or flat-leaf parsley to garnish
Spicy Mexican Slaw with Lime and Cilantro

Thinly slice cabbage, using a mandoline or food processor if desired
- 4 cups thinly sliced green cabbage
- 2 cups thinly sliced red cabbage
- (You can use all green or all red cabbage.)
- 2 green onions, thinly sliced
- 1/2 cup chopped cilantro (or more)
- 4 T mayo
- 3 T fresh lime juice (more or less to taste)
- hot sauce to taste (I used Sriracha sauce)
- salt to taste
Chewy Oatmeal Coconut Brown Sugar Cookies {Anzac Biscuits}

In a large, microwave-safe bowl melt the butter, about 1 minute on high power
- 1/2 cup unsalted butter, melted
- 1 cup light brown sugar, packed
- 2 tablespoons honey (golden syrup may be substituted)
- 2 tablespoons maple syrup (golden syrup may be substituted)
- 1 cup all-purpose flour
- 1 cup old-fashioned whole rolled oats (not instant or quick cook)
- heaping 3/4 cup sweetened shredded coconut
- pinch salt, optional and to taste
- 2 tablespoons boiling water
- 1 teaspoon baking soda
