Blue Cheese Dip

- Kosher salt
- 1 garlic clove, coarsely chopped
- 2 1/2 teaspoon red wine vinegar
- 1 teaspoon finely chopped fresh thyme
- 1/2 pound smoked (or regular) blue cheese, crumbled
- 1 cup sour cream
- 2/3 cup mayonnaise
- Freshly ground black pepper
- Assorted fresh vegetables for dipping (such as baby carrots, green beans, and endive leaves)
No-Bake Cake Batter Truffles

In a large bowl, beat together butter and sugar until well combined
- TRUFFLE COATING:
- 1/2 cup unsalted butter, softend
- 1/2 cup sugar
- 1 tsp. vanilla
- 1 1/2 cups flour
- 1/8 tsp. salt
- 1 cup yellow cake mix, dry
- 3 Tbsp. milk, more if needed to reach dough consistency
- 2 Tbsp. sprinkles
- 16 oz white dipping chocolate
Perfect Potato Soup

Add bacon pieces to a soup pot over medium heat and cook bacon until crisp and fat is rendered
- 6 slices Thin Bacon, Cut Into 1-inch Pieces
- 1 whole Medium Onion, Diced
- 3 whole Carrots, Scrubbed Clean And Diced
- 3 stalks Celery, Diced
- 6 whole Small Russet Potatoes, Peeled And Diced
- 8 cups Low Sodium Chicken Or Vegetable Broth
- 3 Tablespoons All-purpose Flour
- 1 cup Milk
- 1/2 cups Heavy Cream
- 1/2 teaspoons Salt, More To Taste
- Black Pepper To Taste
- 1/2 teaspoons Cajun Spice Mix

Lightened Up No Bake Lemon Icebox Bars

Line an 8x8 baking dish with foil and spray with cooking spray
- Crust:
- 8 (full sheets) graham crackers, crushed
- 3 Tbsp butter
- 2 Tbsp brown sugar
- 1/2 tsp salt
- Filling:
- 1 (8 oz) pkg 1/3 less fat cream cheese, room temperature
- 1 (14 oz) can fat free sweetened condensed milk
- 1/4 cup pasteurized egg product (Egg Beaters)
- zest of one large lemon
- 1/2 cup lemon juice
- 2 tsp powdered unflavored gelatin
- 3 Tbsp boiling water
Berry Ginger Cocktail

Lemon Ginger Syrup: Blitz the ginger in a food processor to form a coarse paste
- Lemon Ginger Syrup:
- 4 ounces peeled, chopped fresh ginger
- 1/4-1/3 cup fresh lemon juice
- 1/4-1/3 cup agave nectar
- Cocktail:
- 3 strawberries (fresh or thawed frozen berries)
- 2 oz. tequila
- 2 oz. lemon ginger syrup
- glug of soda water
- ice and super thin lemon slices for serving

In a large bowl, whisk the flour with the confectioners’ sugar and salt
- 1 1/4 cups all-purpose flour
- 1/4 cup confectioners’ sugar
- 1/2 teaspoon fine sea salt
- 2 sticks plus 2 tablespoons cold unsalted butter, cubed
- 3 tablespoons cold water
- 1 large egg yolk
- 1/2 cup packed dark brown sugar
- 1 cup dulce de leche

Blend the avocado pulp, cacao powder, coconut milk and honey on a food processor until smooth and creamy

- 2 tbs raw cacao powder
- 1 tbs coconut milk
