Turkish Bulgur and Red Lentil Soup

Pick over the lentils, tip into a sieve and rinse well
- For the soup
- 1/2 c red lentils
- 2 tbsp olive oil
- 1 large onion, peeled and finely chopped
- 1 tsp fresh thyme leaves
- Salt and freshly ground black pepper
- 3 garlic cloves, peeled and minced
- 1 tbsp tomato purée
- 4 c vegetable stock
- 1/4 c bulgur wheat
- 1 1/2 tsp sweet smoked paprika
- 1-2 tbsp thick yoghurt
- For the flavoured oil
- 3 tbsp olive oil
- 1 1/2 T butter
- 1 tsp dried mint
- 1/2 tsp sweet smoked paprika

- 1 cups all-purpose flour

- 10 tablespoons unsalted butter, preferably a high-fat, European-style butter like Plugra, chilled and cut into -inch pieces

Pesto Chicken Salad Sandwiches with Arugula and Sun-Dried Tomatoes

- 3 cups shredded or cubed cooked chicken (rotisserie)
