Fennel, Apple, and Gorgonzola Salad

Whisk together lemon juice and oil in a large bowl
- 1 1/2 tablespoons fresh lemon juice
- 1 tablespoon extra-virgin olive oil
- 1 1/2 crisp apples, such as Gala or small Fuji, thinly sliced
- 3 tablespoons dried currants
- 2 medium fennel bulbs (sometimes called anise; 2 lb total)
- 4 oz Gorgonzola (preferably dolce), crumbled
Maple-Pecan Bread

Preheat the oven to 350 degrees
- 1 1/2 cups (185 g) pecans, finely chopped
- 2 1/2 cups all-purpose flour
- 1 cup sugar
- 1 Tbsp baking powder
- 1/2 tsp salt
- 3 large eggs, beaten
- 4 Tbsp unsalted butter, melted
- 1 cup buttermilk
- 3/4 cup pure maple syrup

Arugula, Mushroom, and Blue Cheese Omelet

Heat 1 tbsp of the butter in a nonstick skillet
- 3 tbsp butter
- 3 1/4 oz portobello mushrooms, sliced
- 1 garlic clove, crushed
- 3 eggs separated
- sea salt and fresh ground pepper
- 1/2 cup finely grated Parmesan cheese
- 1 handful finely shredded arugula
- 1/3 cup creamy crumbled blue cheese
Fluffy Baked Eggs with Roasted-Vegetable Hash

Put oven racks in upper and lower thirds of oven and preheat oven to 450°F
- Butter for greasing dish
- 10 large eggs
- 1 cup whole milk
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 5 oz Swiss cheese, coarsely grated (1 1/2 cups)
- 10 oz cremini mushrooms, trimmed and coarsely chopped (1/4-inch pieces)
- 1 large sweet potato (8 to 10 oz), peeled and coarsely chopped (1/4-inch pieces)

- 1/2 cup plum sauce
- 1 tbsp sugar
- 1/4 tsp salt
- 1/4 cup hot water
- 2 tbsp fresh lime juice

- 1 tbsp sesame seeds
- 2 cups finely julienned daikon
- 3 green onions, white parts only, finely shredded into 2 inch segments
- 6 kaffir lime leaves, shredded into hairlike threads
- 1/2 cup fresh cilantro leaves
- 4 chinese sweet pickled shallots, thinly sliced
- 2 tbsp finely shredded pickled tea melons
- 1/4 cup finely shredded sweet pickled ginger
- 2 tbsp finely slivered fresh ginger
- 1 tbsp finely shredded pickled red ginger
- 1/4 cup unsalted roasted peanuts, lightly crushed

- 4 slices veggie ham (thinly slice veggie sausage works nicely also)
- 2 tbsp chopped Italian parsley
- 2 tomatoes, finely chopped

- 1/2 cup whipping cream
- 4 tbsp grated Parmesan cheese
