Blueberry Muffins

Here is a recipe that I usually whip up on a Sunday evening
- Muffins:
- 1.5 cups all purpose flour
- 3/4 cup white sugar
- 1.2 tsp salt
- 2 tsp baking powder
- 1/3 cup vegetable oil
- 1 egg
- 1/3 cup milk
- 1 cup blueberries
- Topping:
- 1/2 cup white sugar
- 1/3 cup flour
- 1/4 cup butter
- 1.5 tsp cinnamon
Banana Bread / Muffins

Preheat oven to 325 F, grease and flour 2- 9x5 loaf pans, or 1 loaf and 6 jumbo muffins with liners
- 2/3 cup sour cream
- 2 teaspoons baking soda
- 1/2 lb. butter (2 sticks) at room temperature
- 1 cup sugar
- 1 cup brown sugar
- 4 eggs
- 1 tablespoon vanilla
- 2 1/4 cups mashed ripe banana (about 6 medium bananas)
- 4 cups all purpose flour
- 1 teaspoon baking powder
- Brown sugar crystals for sprinkling on top
Mac n'Cheese

So this is not a fat free, low calorie, weight loss recipe
- 4 tblsp butter
- 4 tblsp flour
- 2 cups milk
- 1 – 2 bay leaves (one large or a couple small)
- 1/2 tblsp paprika
- 1/2 tblsp dehydrated onion (*optional)
- 3.5 cups aged cheddar cheese, shredded
- 1/2 cup bread crumbs
- salt and pepper
- 2 cups dry macaroni pasta
- alternatively you could sauté up some fresh onion and add that – or don’t add any at all.
Banana Muffins

Combine sugar, flour, baking soda, baking powder, and salt
- 1 cup sugar
- 1.5 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup butter, melted
- 2 eggs
- 3-4 bananas mashed
Flour Tortillas

These are delicious and super easy! I will never go back to store bought flour tortillas!
- 1 1/4 cups flour
- 1/2 tsp salt
- 2.5 tblsp unsalted butter
- 1/4 – 1/3 cup warm water
Shortbread

- 1 cup unsalted butter, softened
- 1/2 cup sugar
- 1 tsp vanilla
- 1/4 tsp salt
- 2 cups flour
Pumpkin Gingersnap Cookies

These are incredibly pumpkin-licious and flavorful! A perfect snack for the fall and winter months made even better
- 1/2 cup butter, room temperature
- 1 cup granulated sugar (plus more for rolling cookies in)
- 1/2 cup pureed pumpkin
- 1/4 cup molasses
- 1 large egg
- 1 teaspoon vanilla
- 2 1/3 cups all purpose flour
- 2 teaspoon baking soda
- 2 teaspoons cinnamon
- 1 1/2 teaspoon ground ginger
- 1 teaspoon ground cloves
- 1/2 teaspoon salt
Chocolate Chip Cookies

These are a staple in our house! Made almost weekly for my husband
- 1 1/2 cups of flour
- 1/2 tsp baking soda
- 1/2 cup unsalted butter – softened
- 1/2 cup packed brown sugar
- 1/2 cup white sugar
- 1 large egg
- 1 tblsp vanilla extract
- pinch of salt
- 3/4 cup chocolate chips
Beef Stew

The delicious aroma will fill your house all through the afternoon
- 1 pound stewing beef
- 4 cups potatoes – peeled and chopped
- 4 carrots – peeled and chopped
- half white onion diced
- 4 garlic cloves minced
- 1.5 tsp dried thyme
- olive oil
- salt and pepper
- 4 cups beef stock
- 1/4 cup flour
- 1 tblsp butter
- 2 bay leaves
Carrot Cupcakes

Directions Preheat oven to 375 degrees
- For The Cupcakes:
- 1 1/2 cups all-purpose flour, spooned and leveled
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon grated nutmeg
- 3/4 cup (1 1/2 sticks) unsalted butter, melted
- 1 cup packed light-brown sugar
- 1 large egg
- 2 tablespoons plain low-fat yogurt
- 1/4 teaspoon pure vanilla extract
- 1 1/2 cups grated carrots (from about 4 medium carrots)
- For The Frosting:
- 1 package (8 ounces) cream cheese, room temperature
- 1/4 cup (1/2 stick) unsalted butter, room temperature
- 1 cup confectioners' sugar
- 1 1/2 teaspoons pure vanilla extract
- 1 teaspoon grated orange zest
