Pumpkin Nut Bread

Grandma Loy
- 1 c sugar
- 1/2 c oil
- 2 eggs
- 1 c canned pumpkin
- 1/3 c water
- 1/2 c nuts
- 1/2 c raisins or dates
- 1 3/4 c flour
- 1 teas baking soda
- 1 1/2 teas baking powder
- 1/4 teas salt
- 1/2 teas cloves
- 1/2 teas allspice
- 1/2 teas cinnamon
Crab Cakes

Mix all ingredients with crab and crumbs
- 1 can crab meat (claw)
- 1 c bread crumbs
- 1 egg
- 3 G mayonaise
- 1 teas Old Bay seasoning
- 3 teas lemon juice
- 1 T Worcheshire Sauce
- 1 teas dry mustard
- 2 T finely chopped parsley
- 2 T finely chopped pepper
- 2 T finely chopped green onions
Pork Chili Verde

Char chilies over gas flame until blackened on all sides
- 8 fresh Anaheim chilies
- 1 teas cumin seed
- 2 T vegtable oil
- 1 c chopped onion
- 2 lbs trimmed boneless pork shoulder,
- cut into 1/2 inch pieces
- 3 garlic cloves, finely chopped
- 4 cups water
Grilled Pork Tenderloin

Mix molasses, vinegar, mustards in bag
- 1/4 c molasses
- 2 T apple cider vinegar
- 2 T dijon mustard
- 2 T coarse grained mustard
- 1 3/4 lb pork tenderloin

Walnut Almond Granola

Preheat oven 325. Mix first 4 ingredients and cinnamon in small saucepan
- 1/2 c honey
- 1/2 c canola oil
- 2 teas vanilla extract
- 2 teas almond extract
- 2 teas ground cinnamon
- 5 c bran flakes cereal
- 2 1/4 c old fashioned oats
- 1 3/4 c sliced almonds
- 1 3/4 c walnuts, coarsely chopped
- 1 1/3 c sweetened flake coconut
- 1 1/2 c golden raisins
Steaks with Brandy Cream Sauce

400 Heat oil in pan. Salt/pepper steaks
- 1 T olive oil
- 4 1" beef tenderloin steaks
- salt/pepper
- 2 c fresh mushrooms
- 2 green onions, bias sliced in 1"
- pieces
- 1/3 c brandy
- 1 c whipping cream
Swiss Cheese Onions

- 4-6 Onions, sliced thick
- 2 T butter
- 2 T flour
- Dash pepper
- Dash nutmeg
- 1 1/2 C milk
- 1 1-1/1 c swiss cheese
- 1/2 loaf sourdough bread

Apple Carrot Cake

- 2 c sugar
- 1 1/2 c oil
- 2 teas baking soda
- 2 teas baking powder
- 2 c flour
- 2 teas vanilla

- 3 large apples, cup up unpeeled
- 3 cup raw shredded carrots
- 1 1/2 c chopped walnuts
Bacon, Gruyere & Ham Strata

Combine milk, green onions, egg substitute, mustard, and pepper in large bowl, stirring with wisk
- 2 c fat free milk
- 1 c chopped green onions
- 1 c egg substitute
- 1 T. Dijon mustard
- 1/4 teas ground red pepper
- 12 oz sourdough bread, cut into
- 1/2 " cubes (10 cups) toasted
- 3/4 c diced ham
- Cooking spray
- 1 c (4 oz) shredded Gruyere cheese
- 4 bacon slices cooked & crumbled
