- 6 boneless, skinless chicken breasts
- 1 can whole berry cranberry sauce
- 1 pdg dry onion soup mix
- 1 8 oz bottle Cataline or Russian
- salad dressing
Chinese Chicken Salad

Roast dry noodles, broken up, and almonds in oven
- 1 roasted chicken, cut into pieces
- 1 head nappa cabbage
- 2 bunches green onions
- 1 pkg top ramen dry noodles
- 1 c sliced almonds
- Bottled non fat ginger dressing
- (Trader Joes)
Chicken Enchilada Casserole

300 Mix soup, chilies, olives, salsa & onion
- 1 med chicken, cooked, skinned &
- chopped
- 1 lge can diced green Ortega chilies
- 1 can sliced black olives
- 2 cans cream of chicken soup
- 1 lb jack cheese, grated
- 1 lb grated cheddar cheese
- 1/2 c chopped onion, cooked until soft
- 1/2 c salsa
- 1 pkg tortillas, torn in pieces
Fried Chicken

- 1 1/2 c buttermilk
- 3 3/4 teas kosher salt
- 1 1/2 teas pepper
- 1 1/2 c flour
- 2 teas chili powder
- 3/4 teas salt
- Canola oil for frying.
Pasta with Vodka Cream Sauce

Cook pasta according to directions
- 1/2 lb uncooked penne pasta
- 1 T olive oil
- 1/2 c finely chopped onion
- 1 teas salt, divided
- 1/4 teas crushed red pepper
- 1 clove garlic
- 1/2 c vodka
- 1/4 c fat free less sodium chicken broth
- 1 14/5 oz can diced tomatoes,undrained
- 1/4 c whipping cream
- 3 T thinly sliced fresh basil
Fajitas

- 2 lbs flrank steak or boned chicken
- breasts
- 1/2 c oil
- 1/3 c lime juice
- 2 pdge dry Ranch Dressing mix
- 1 teas ground cumin
- 1/2 teas pepper

- 1/4 c mayonnaise
- 1/8 tes cayenne pepper
- 3/4 c shredded cotijo cheese
- Lime wedges
Baked Rice with Sour Cream & Chilies

350 Bring water, butter & salt to boil
- 2 fresh pablano chiles
- Brown over flame or BBQ until
- skins are brown. Put in zip lock
- bag and steam. Peel skins off.
- 2 c water
- 1 1/2 teas salt
- 1 cup white rice
- 1 T oil
- 1/4 C plus 2 T chopped onion
- 1 clove garlic, chopped
- 3/4 c drained canned whole kernal corn
- 1/2 c sour cream
- 1/4 c chopped fresh cilantro
- 2 1/2 c grated cheddar cheese (9oz)
Oven Roasted Potatoes

- 3 lbs small new potatoes, scrubbed
- & dry
- 1/4 c olive oil
- 1 1/2 teas course salt
- 1/4 teas pepper
- 1 teas fresh rosemary (optional)

- 10 med potatoes or 1 large bag frozen
- hash browns
- 8 oz shredded cheddar cheese
- 1/2 c melted butter
- 2 T chopped green onions
- 2 C sour cream
- Salt & Pepper
