Chocolate Panforte

Crush all the bitter almonds with half of the sweet ones
- 5 oz bitter chocolate
- 5 oz sugar
- 14 o) sweet almonds, peeled
- 1 1/2 oz bitter almonds, peeled
- 10 oz honey
- 12 oz assorted candied fruit
- 1 tablespoon candied orange peel
- 7 ozwhite flour
- Pinch of pepper
- 4 teaspoons ground cinnamon
- Pinch of grated nutmeg
- Scant handful of pine-nuts
- Icing sugar
White Chocolate Raspberry Mousse Bars

Heat oven to 350F . Combine all crust ingredients in small bowl
- Crust Ingredients:
- 2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons butter, melted
- Filling Ingredients:
- 2 pints raspberry sorbet, sherbert or ice cream softened
- 1 (4-ounce) bar white chocolate, chopped
- 2 cups whipping cream
- Garnish:
- Fresh raspberries
- White chocolate baking bar, shaved
Chocolate Cranberry Torte

To make sauce Bring first 3 ingredients to boil in saucepan over high heat, stirring until sugar dissolves

- 1 cup fresh or frozen cranberries
- 3/4 cup water
- 1/3 cup sugar
- 2 tablespoons Chambord (black raspberry liqueur)
- Torte
- 1 cup dried sweetened cranberries
- 1/3 cup Chambord
- 1 cup (2 sticks) unsalted butter, cut into pieces
- 12 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
- 1 1/2 cups sugar
- 6 large eggs, room temperature
- 2/3 cup all purpose flour
- 1/2 teaspoon salt
- Glaze
- 1 cup whipping cream
- 10 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
- 1/4 cup Chambord

Chocolate Candy Cane Cake

Preheat oven to 350F. Lightly grease two 9-inch round cake pans
- 1 pkg. (2-layer size) chocolate cake mix
- 1 pkg. (4-serving size) Chocolate Flavor Instant Pudding & Pie Filling
- 4 eggs
- 1 container (8 oz.) Sour Cream
- 1/2 cup oil
- 1/2 cup water
- 4 squares Semi-Sweet Baking Chocolate, chopped
- 18 small candy canes, coarsely crushed (about 1 cup), divided
- 1 tub (8 oz. ) cool whip

- 2 cups granulated sugar
- 2 cups water
- 4 tablespoons unsweetened cocoa powder
- 1 teaspoon baking soda
- 1 cup butter

- 3 cups self-rising flour

- 1/4 cup packed brown sugar
- 1/4 tsp salt
- 1/4 cup light rum
- 2 tsps vanilla
- 16 oz semi sweet chocolate,chopped
- 16 oz milk chocolate,chopped
- chopped nuts and sprinles
- 1 9 inch tall foam cone
