Halibut With Lentils and Mustard Sauce

Heat 1 tablespoon of the oil in a large saucepan over medium heat
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, chopped
- 1 medium sweet potato, peeled and cut into 1/4-inch pieces
- 2 1/2 cups low-sodium chicken broth
- 1 1/4 cups green lentils, rinsed (1/2 pound)
- kosher salt and black pepper
- 4 6-ounce pieces halibut fillet
- 1/4 cup Dijon mustard
- 1/4 cup dry white wine
- 1 tablespoon chopped fresh tarragon
Tandoori Drumsticks with Cucumber Salad

This was kind of messy and involved to make, but the end result was very tasty
- FOR SALAD:
- 1 cucumber, peeled, seeded, and thinly sliced
- 1/2 small red onion, thinly sliced
- 1 clove garlic, finely chopped
- 1 teaspoon chopped fresh mint
- 1 teaspoon chopped fresh cilantro
- Juice of 1/2 lemon
- 2 tablespoons plain Greek-style yogurt
- Salt and pepper, to taste
- FOR CHICKEN:
- 1 piece (2 inches) ginger, coarsely chopped
- 3 cloves garlic
- 3 tablespoons tomato paste
- 1 small chili pepper, cored and cut up
- 2 tablespoons paprika
- 2 teaspoons ground cinnamon
- 2 teaspoons ground cloves
- 2 teaspoons ground cardamom
- 2 tablespoons black pepper
- 2 teaspoons turmeric
- 2 tablespoons salt
- 3/4 cup water
- 1 cup plain Greek-style yogurt
- 12 chicken drumsticks
- Oil (for the pan)
- 1 1/2 lemons, cut into wedges

- 2 lbs ground beef
- 1/4 cup onion, chopped
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 (14 3/4 ounce) can cream-style corn
- 1 (10 1/2 ounce) can cream of mushroom soup
- 1/2 cup milk
- 7 ounces pasta, cooked
- 1 cup frozen peas
- 1 cup cheese, grated
Absurdly Addictive Asparagus

In a large non-stick pan, sauté pancetta, stirring frequently, over medium heat, until crisp and lightly golden
- 4 ounces pancetta, cut into 3/8 inch to 1/4 inch dice
- 1 tablespoon butter
- 1 pound asparagus, woody ends trimmed and sliced into 2 inch pieces on the bias
- 1 1/4 cup leek, thinly sliced crosswise (white and pale green parts only)
- 2 cloves garlic, minced
- Zest of one lemon
- 1 teaspoon orange zest
- 2 tablespoons toasted pine nuts
- 1-2 tablespoon Italian parsley, chopped
- Salt and freshly ground pepper to taste

- 1/2 pound bulk Italian pork sausage (or use Jimmy Dean cooked turkey sausage "crumbles")
- 1/3 cup onion, chopped
- 1/4 cup red bell pepper, chopped
- 1 can (10.2-ounces) Pillsbury® Grands!® refrigerated buttermilk biscuits (5 biscuits)
