Banana, chocolate and oatmeal tea bread

Preheat the oven to 180ºC/355ºF
- 1 egg replacer
- 1/3 c canola oil
- 1/2 c caster sugar
- 3 bananas – 2 thinly sliced, for the batter, and 1 in thicker slices, to decorate the bread
- 2 T. (heaping) rolled oats* - set aside 1 tablespoon, for sprinkling
- 3/4 c. (150g) all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 40 g (2-1/2 T) dark chocolate, finely chopped – I used 60% cocoa solids
Samosa Soup

A hearty and flavorful Indian spiced soup
- 1 T. olive oil
- 2 t. mustard seeds
- 1 yellow onion, diced
- 1/2 t. chili powder
- 1 t. tumeric
- 1/2 t. cayenne
- 1/2 t. curry powder
- 1/2 t. coriander
- 1/2 t. garam masala
- 1/2 t. cumin
- 1 T. fresh ginger
- 2 cloves garlic, minced
- 1 lb. potatoes, diced
- 1 lb. cauliflower, chopped
- 1 lb. bag frozen peas and carrots
- 3 c. vegetable broth
- 1 can lite coconut milk
- 8 oz. fresh spinach, chopped
- 1/4 c. fresh cilantro, chopped
- juice of 1 lemon
- 1 t. salt
- 1/2 t. black pepper
Holiday Frummus

Frummus is hummus with fruit
- 1 can (15 oz.) chickpeas, drained and rinsed
- 1/2 cup whole cranberry sauce
- 1 clove garlic, minced
- 1 T. fresh lemon juice
- 1 T. red wine vinegar
- 1 T. tahini
- 1/2 t. cumin
- 1/2 t. crushed red pepper
- 1/2 t. kosher or sea salt
- 1/4 cup chopped fresh cranberries (plus extra for garnish)
- 1/4 cup chopped raw pistachios or almonds (plus extra for garnish)
Cornmeal Cake (gluten free and vegan)

- 1 cup gluten free flour blend
- 1/2 cup cornmeal, plus extra for pan
- 1-1/2 t. baking powder
- 1/2 t. salt
- 1/2 t. xantham gum
- 4 T. margarine, room temperature
- 4 T. applesauce
- 1 T. orange zest
- 2/3 cup sugar
- 2 EnerG egg replacers
- 1/2 cup plain soygurt
- 2 t. vanilla extract
- 2 T. coarse sugar
Roasted Sweet Potato Salad

- 1 medium sweet potato, peeled and diced
- 1/2 t. salt, kosher or sea salt
- 1/2 t. black pepper

- 3 ounces fresh baby spinach

- 1/4 cup softened margarine
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar

Asian Pesto

A nice twist on traditional pesto, and a great topper for grilled tofu steaks
- 1 jalapeno, seeded and chopped
- 4 cloves garlic, peeled
- 2 t. sucanat
- 2 t. fresh minced ginger
- 1/2 cup roasted peanuts
- zest of one lime
- 1/4 cup EVOO
- 1/2 cup packed fresh basil leaves, roughly chopped
- 1/4 cup packed fresh mint leaves, roughly chopped
- 1 cup packed fresh cilantro, roughly chopped
- 1 T. tamari
- up to 1/4 cup more EVOO or water
- S&P to taste

Black Bean Salad

This is my most requested recipe to bring to gatherings
- 1 can (15 oz.) black beans, rinsed and drained
- 1 cup frozen corn
- 4 green onions, sliced thin, white and green parts
- 1 fresh jalapeno, minced
- 1 medium red bell pepper, diced
- 1 large fresh tomato, diced
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 key limes or 1 medium lime
- 1 t. agave nectar
- 2 T. Italian style salad dressing
- 1 clove garlic, crushed
- 1/4 t. McCormick’s Spicy Montreal; Seasoning (or use red chili flakes)
- salt & pepper to taste
Peach Buckle

This recipe is gluten free, but can be adapted to "normal" by using allpurpose flour and omitting the xantham gum
- Cake:
- 1/4 cup canola oil
- 1/2 cup Sucanat (or other granular sugar)
- 1/4 cup maple syrup
- 1/4 cup applesauce (I used peach butter)
- 1-1/4 cups gluten free flour (I like Bob’s Red Mill)
- 3/4 cup oats*
- 2 t. baking powder
- 1 t. xantham gum (or guar gum)
- 1 t. cinnamon
- 1/2 t. salt
- 1/2 cup nondairy milk
- 1 t. vanilla
- 2 cups diced peaches (I like to leave the skin on)
