Butternut Squash and Lentil Soup

The lentils are left whole in this soup, adding a bit of texture to the creamy squash base
- 1 medium onion, chopped
- 1 T. oil
- 1 c. water
- 1 medium butternut squash, diced (about 2 cups)
- 1 clove garlic, minced
- 1 T. dried parsley
- 1 t. dried oregano
- 1/2 t. red chili flakes
- salt & pepper to taste
- 3 cups vegetable broth
- 1/2 cup yellow or brown lentils
- 1 T. tahini
- paprika for garnish
Cabbage Soup with Chickpeas and Oats

This delicious soup can be ready in 30 minutes, although like most soups, it tastes even better the next day
- 1 small head green cabbage, shredded
- 1 medium onion, chopped
- 2 medium carrots, peeled and chopped
- 1 (15 oz.) can fire roasted tomatoes, chopped
- 3 cloves minced garlic
- 6 cups vegetable broth
- 1 t. dried basil
- 2 t. dried parsley
- 1 t. dried oregano
- 1 t. ground coriander
- 1/2 t. dried rosemary
- 1/2 t. dried thyme
- 1/2 t. dill seed
- 1/2 t. dried red pepper flakes
- 1 (15 oz.) can chickpeas, drained and rinsed
- 1/2 c. oats (I used 5 minute oats)
- 1 T. red wine or cider vinegar
- salt and pepper to taste

My family enjoys this Italian style protein-packed salad all year round, but especially during the hot Texas summer...
- 1 (15 oz.) can red beans, drained & rinsed
- 1 (15 oz.) can white beans (garbanzo or cannelini), drained and rinsed
- 1/2 lb. fresh cooked green beans, cut into 1 inch pieces
- 2 green onions, sliced
- 1 small or half of a large red bell pepper, chopped
- 1/2 cup shredded carrots
- 2 tablespoons (about 8 pieces) sundried tomatoes, hydrated and chopped
- 1/3 cup sliced almonds, toasted
- 1/3 cup chopped walnuts, toasted
- juice of 1 lemon (1-2 tablespoons)
- 3 T. Italian style salad dressing
- 2 T. chopped fresh parsley
- salt and pepper to taste

- 2 cups cooked and cooled white rice
- 1 medium crisp apple, diced
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped carrots
- 1/2 cup chopped sweet onion
- 5 dates, chopped
- 1/3 cup sunflower seeds, preferably unsalted
- 1/4 cup chopped fresh parsley
- salt and pepper to taste
- Dressing:
- 1/4 cup apple juice or cider
- 1 T. fresh lemon juice
- 1 T. olive oil
- 1 t. all purpose seasoning (such as McCormick’s)
