Ingredients

  • 1 can (15 oz.) black beans, rinsed and drained
  • 1 cup frozen corn
  • 4 green onions, sliced thin, white and green parts
  • 1 fresh jalapeno, minced
  • 1 medium red bell pepper, diced
  • 1 large fresh tomato, diced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 key limes or 1 medium lime
  • 1 t. agave nectar
  • 2 T. Italian style salad dressing
  • 1 clove garlic, crushed
  • 1/4 t. McCormick’s Spicy Montreal; Seasoning (or use red chili flakes)
  • salt & pepper to taste

Preparation

Step 1

Mix everything in a large bowl. Chill until ready to serve, at least one hour. Serve as a salad, as a salad topper, or with tortilla chips.
