Beef Vegetable Noodle Soup

A hearty warm soup that is sure to heat up any winter night
- 1 lb ground sausage
- 1 lb ground beef
- 1 medium onion diced
- 4 cloves garlic minced
- 1/2 medium head cabbage cut into small pieces
- Kosher salt and freshly ground pepper
- 2 quarts beef stock
- 1 can 14 oz. diced tomatoes
- 3/4 lb. frozen mixed vegetables
- 1 tbsp chili powder
- 3/4 lb noodles – your choice
BBQ Spaghetti

My take on a Memphis original
- One pork butt – 4-5 lbs
- Memphis Rub on it. I made a double batch.
- Barbecue Sauce
- 1/2 to 1 cup Beef stock
- 1 scoop pasta water
- 1/2 to 1 cup Juice from pork butt
- 1 lb spaghetti cooked per package directions
- Salt and pepper to taste
- Cheddar and Monterey Jack Cheese
Taco Pasta

- 1 1/2 lb pasta – I used Penne
- 2 lbs ground meat
- Taco seasoning
- 2 14 oz cans black beans
- One large handful chopped cilantro
- Condiments: you may use what you want.
- Tomatoes
- Sautéed peppers and onions
- Guacamole
- Black olives, sliced
- Sour cream
- Lettuce
- Cheddar and jack cheese, shredded
- Jalapenos

- 1 lb. mild Italian Sausage
- 4-6 garlic cloves, minced
- 1 lb cheese tortellini
- 1 bag fresh spinach
- 1 tsp fennel
- 1 tsp thyme
- salt and pepper to taste
- 3 quarts beef stock
- Parmesan cheese
Hash Brown Casserole with Sausage and Eggs

A hearty meal that will be enjoyed by the entire family - serve for breakfast or dinner
- 1 1/2 - 2 lbs Sausage – breakfast (I used Bob Evans)
- Hash browns (I used 2 packages Simply Potatoes – aren’t they recalled now?)
- 2 tbsp Cumin
- 1 tbsp Paprika
- Salt
- Pepper
- 8 Eggs beaten (I usually scramble them in at the end, but I poached them this time. I liked them poached very much)

A spicy quick mexican dinner that is easy and fun to make
- 1 lb. Chorizo sausage
- 4 garlic cloves, minced
- 1 can black beans, rinsed
- 1 can green chilies
- 8 oz tomato sauce
- 1 tsp adobo seasoning
- 1/2 cup cheddar cheese
- 1/2 cup mozzarella cheese
- 2 cups salsa – your choice
- 1/2 cup tortilla crumbs
- 1 lb lasagna noodles cooked per package directions.
Cube Steaks with Gravy and Noodles

An easy dish that uses cube steak in a non traditional way
- 3 lb cube steak cut into about 2 in pieces.
- Salt and pepper
- 6 cloves garlic, minced
- 1 onion chopped
- 2 tsp steak seasoning
- 1 -2 jars – 6 oz sliced mushrooms, or fresh. Whichever you prefer. I used jarred because I had them in my pantry.
- 1 quart beef stock
- 1/2 to 1 cup red wine
- Olive oil – two turns of the pan
- 2 tbsp butter
- 2 tbsp flour
- 1 large sprig rosemary, minced
- 1 lb noodles – your choice. I used Gemelli and my kids loved their shape!
- 1 handful parsley chopped
