Goat Cheese Salad with Raspberry Vinaigrette

- 1 log goat cheese,about 10 oz grated or crumbled
- 2 heads romaine lettuce,finely chopped
- 1 small red onion,sliced into half moon rings
- handful of terra chip sticks
- Quick and Easy Raspberry Dressing
- 1 bottle Garlic Expression salad dressing
- 12 oz bottle raspberry jam
- Blend dressing in a food processor until smooth. Then add jam and process until smooth.
- Homemade Raspberry Dressing
- 1 Tbs shallots,finely minced
- 3 Tbs raspberry preserves
- 2 Tbs balsamic vinegar
- 1/3 cup olive oil
- salt and black pepper
- Place shallots in food processor and mince finely. Add preserves and vinegar. In a steady stream while machine is running,add the olive oil. Add salt and pepper to taste. You can do this by hand with a whisk too.

Preheat oven to 400. Place whole garlic cloves in your smallest saucepan and set aside
- 6 cloves garlic,peeled
- 2 large or 3 small skinless boneless chicken breasts
- salt and pepper to taste
- 1 Tbs honey
- 1 Tbs mustard
- 1 Tbs apple cider vinegar
- 1-2 Tbs water
- Salad
- 10 oz arugula
- 1/4 cup roasted unsalted walnuts,roughly chopped
- 1 grapefruit,segmented and skin removed
- 1 small bulb fennel,shaved or thinly sliced
Peanut Butter Pecan Ice Cream

Soften ice cream,add rest of ingred
- 1 container vanilla ice cream
- 1 cup creamy peanut butter
- 1/2 cup confec. sugar (can be 1 cup too)
- pecans toasted and crushed
- chocolate chips optional
Mini White-Chocolate Cheese Danishes

Mix all the filling ingredients
- 2 (8-oz) containers cream cheese(not whipped)
- 1/2 cup confectioner's sugar and more for sprinkling
- 1 cup sugar
- 1 egg
- 1/2 tsp vanilla extract
- 1 bar white chocolate(melted on a double boiler)
- 1 package mini flaky pastry squares,softened

- 1/4 cup boiling water

Tomato Asparagus Salad

Boil asparagus in a large pot of salted water for 2 min
- 1 lb asparagus,trimmed and halved
- 6 cups halved cherry,grape and pear tomatoes in varied colors
- 1/2 cup crumbled Feta cheese,optional
- 1 ripe avocado,cut into cubes
- 1 cup sliced basil leaves
- 1/4 cup olive oil
- 2 tsp lemon juice
- 2 tsp dijon mustard
- 1/2 tsp kosher salt
- 1/2 tsp pepper

Preheat oven to 325. Using a wooden spoon,combine all ingredients in a large bowl
- 1 1/4 cups flour
- 1 cup sugar
- 1 cup grated carrots(1-2 carrots,peeled and grated)

- 3/4 cup oil(canola or veg)

- 1/2 cup popcorn kernels
