Slow-Roasted Chuck Roast {Cook's Country}

1. FOR THE BEEF: Pat roast dry with paper towels
- BEEF
- 1 (5- to 6-pound) center-cut boneless beef chuck-eye roast
- 5 teaspoons kosher salt
- 2 teaspoons pepper
- 2 teaspoons onion powder
- 2 teaspoons granulated garlic
- 2 tablespoons vegetable oil
- 1/4 cup all-purpose flour
- 1/2 cup red wine
- 1 1/2 cups beef broth
- 1 1/2 cups chicken broth
- HORSERADISH SAUCE
- 1/2 cup heavy cream
- 1/2 cup sour cream
- 1/3 cup prepared horseradish, drained
- 1 tablespoon Dijon mustard
- 1 garlic clove, minced
- 1/2 teaspoon pepper
Grilled Leeks and Stewed Garlic on Toast

1. Bring a medium pot of liberally salted water to a boil
- Salt, preferably fleur de sel
- 6 small leeks, whites and pale green parts only
- 7 –9 tbsp. extra-virgin olive oil
- 2 heads garlic, cloves separated and peeled
- 6 slices crusty country bread
- 4-5 anchovy filets (optional), cut into strips
- Freshly ground black pepper
Tagliatelle with Quick Lamb Sugo

A sugo is a rich Italian sauce that usually cooks for hours
- Kosher salt
- 2 Tbs. extra-virgin olive oil
- 1 small fennel bulb, trimmed, cored, and cut into small dice (about 1-1/4 cups), plus 1 to 2 Tbs. chopped fennel fronds
- 1 small onion, cut into small dice
- 1 lb. ground lamb
- Freshly ground black pepper
- 1/4 cup tomato paste
- 3/4 cup dry red wine
- 3/4 cup tomato juice
- 1 Tbs. chopped fresh oregano
- 1 lb. fresh tagliatelle or fettucine
- Freshly grated Pecorino Romano for serving

- 2 cups rolled oats
- 1/2 cup walnut pieces, chopped

Melt butter in a Dutch Oven over medium heat
- 2 tablespoons salted butter
- 1 medium onion, diced
- 2 large garlic cloves, miniced
- 1 stalk celery, diced

- 1 lb. sweet or hot Italian sausages, casings removed
- 1 small yellow onion, finely chopped

- 1 tsp. dried oregano

- 1 can (28 oz) crushed tomatoes
- 1 pound rigatoni
- 1 cup 2% milk
- 1/2 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper

Crab Salad Melts

This crab and asparagus melt is delicious for a light spring dinner or lunch
- 3 asparagus spears, or 12 snow peas, trimmed and thinly sliced (about 1/3 cup)
- 8 ounces crabmeat, any shells or cartilage removed
- 1/3 cup finely chopped celery
- 1/4 cup finely chopped red bell pepper
- 1 scallion, finely chopped
- 4 teaspoons lemon juice
- 1 tablespoon low-fat mayonnaise
- 1/4 teaspoon Old Bay seasoning
- 2-5 dashes hot sauce
- Freshly ground pepper, to taste
