G. Garvin’s Grilled Shrimp Breakfast Cocktail

Grilled shrimp served atop wonton crisp, with scrambled egg, and pancetta & cheddar cheese grits
- 2 cups Parmean and Cheddar Cheese Grits (see recipe, page 16)
- 4 wonton wrappers
- oil for deep-fat frying
- 8 medium shrimp, peeled and deveined
- kosher salt
- ground black pepper
- seasoned salt
- 6 organic eggs, lightly beaten
- 1/4 cup heavy cream
- 2 tbsp. chopped green onion
- 2 tbsp. Butter
- 4 slices, pancetta, cooked crisp
- green onions, cut in thin strips
Apple Cinnamon Granola

Preheat oven to 350. Mix all dry ingredients in one bowl
- 3 1/2 cups rolled oats
- 3/4 cup unsweetened applesauce
- 1/3 cup maple syrup
- 2 tsp cinnamon
- 1/4 tsp ginger
- 1/4 tsp cloves
- 1/2 tsp nutmeg
- 1 tsp vanilla extract
Organic Master Tonic

The super cleansing tonic is an antibiotic, destroying both gram-positive and gram-negative bacteria
- 1 30 oz. bottle Organic Apple Cider Vinegar (I recommend Braggs ACV)
- 1/4 cup chopped Garlic
- 1/4 cup Onions
- 1/4 cup Habanero peppers (or hottest peppers you can find)
- 1/4 cup grated Ginger
- 1/4 cup grated Horseradish
- 2 T Turmeric
Chicken Posole

Pat the chicken breasts dry, then pound them to an even thickness using the bottom of a jar or a meat pounder
- Posole toppings, use all or some:
- 1 to 1 1/2 pounds chicken breast
- 8 cups chicken broth
- 1 bay leaf
- 1 teaspoon minced fresh thyme (1/2 teaspoon dry)
- 1 teaspoon minced fresh oregano (1/2 teaspoon dry)
- 2 clove garlic, crushed
- 2 teaspoons cumin
- 1 to 2 teaspoons salt
- 1 teaspoon chili powder
- 1/2 teaspoon coriander
- 1/2 teaspoon smoked paprika, optional
- 1/4 teaspoon red pepper flakes, optional
- 1 (29-ounce) can hominy, drained and rinsed
- Diced avocado
- Lime wedges
- Diced red, white, or yellow onion
- Thinly sliced radishes
- Shredded lettuce or cabbage
- Diced tomatoes
- Diced tomatillos
- Diced green or red bell peppers
- Chopped cilantro
- Crumbled cotija cheese
- Hot sauce

- Sauce:
- 1/2 cup granulated sugar
- 3 tablespoons water
- 1 tablespoon butter
- 1/2 cup evaporated fat-free milk
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
- French Toast:
- Cooking spray
- 1 (12-ounce) loaf French bread, cut into 16 (1/4-inch-thick) slices
- 1/2 cup strawberry preserves
- 2 cups fat-free milk
- 3/4 cup egg substitute
- 1 tablespoon vanilla extract
- 1/8 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 2 large eggs
- 3 tablespoons chopped pecans
- 2 tablespoons powdered sugar
