White Chocolate Cranberry Almond Bark

High on my "must make" list for holiday baking, this bark is quick and easy to make and is always a hit
- 1 pound good quality white chocolate
- 1 cup dried cranberries
- 1/2 cup toasted coconut
- 1/3 cup sliced toasted almonds
- 1 ounce semi-sweet chocolate
- 1/2 tsp. butter or shortening
Pan-Seared Pork Tenderloin with Hoisin-Sriracha Glaze

Tender and flavorful, pork tenderloin is really versatile when it comes to using it in different recipes
- Glaze:
- 1 Pork tenderloin (about 1- 1 1/2 pounds)
- 2 tsp. hot chili oil
- 2 tsp. olive oil
- Salt and pepper
- 3 Tbsp. Hoisin sauce
- 1 Tbsp. soy sauce
- 2 tsp. Sriracha sauce
- 1 Tbsp. fresh lime juice
- 1/2 tsp. sesame oil
- 1 clove garlic, pressed

- 1 heaping Tbsp. yeast
- 2 Tbsp. liquid honey
- 1 egg
- 1 tsp. salt
- 1/4 c. melted shortening or lard (lard will give you a lighter texture)
- 4-5 c. flour
- 1/3 c. melted butter
Lemon Chiffon Cake

Chiffon cake, with its light and airy texture, is the perfect end to any meal
- Cake:
- 1 1/2 cups flour
- 1 Tbsp. baking powder
- 1 tsp. salt
- 1/2 cup sugar
- 1/2 cup oil
- 6 egg yolks
- 3/4 cup water
- 1 Tbsp. grated lemon rind
- 6 egg whites
- 1/2 tsp. cream of tartar
- 3/4 cup sugar
- Filling:
- 1 cup whipping cream
- 2 1/2 cups lemon pie filling (you can use a mix, such as Shirriff's, or a homemade recipe)

Cranberry and Goat Cheese Salad with Grapes and Pine Nuts

- 1 pkg mixed greens
- 1/4 cup dried cranberries
- 1/3 cup red or green grapes, halved
- 1/4 cup toasted pine nuts
- 1/3 cup crumbled goat cheese
- Juice of one lemon (use fresh lemon!)
- 1/4 cup olive oil
- 2 tsp. sugar
- 1/4 tsp. salt
- 1/8 tsp. pepper

- 6 cloves garlic, peeled
- 2 small or 1 large yellow onion, peeled and sliced
- 1/3 cup extra virgin olive oil
- salt and freshly ground black pepper
- 5 cups chicken broth
- 2 bay leaves
- 4 Tbsp. butter
- 1 tsp. dried Herbes de Provence (or you can use 1/2 cup chopped fresh basil)
- 1/2 cup half-and-half cream (optional)
