Roast Leg of Lamb with Rosemary and Honey-Balsamic Pan Gravy

This recipe resulted in one of the most tender and flavorful roasts I had ever made
- 1 boneless leg of lamb (about 5 pounds)
- 1/4 cup honey
- 2 Tbsp. Dijon mustard
- 1/4 cup Balsamic vinegar
- 1/4 cup olive oil
- 5 cloves garlic, minced
- 2 Tbsp. chopped fresh rosemary
- 1 tsp. pepper
- 1 Tbsp. lemon juice
- 1 tsp. course salt
- 1 1/2 cups beef or chicken broth
- 1/2 cup dry red wine

- 1 1/2 cups butter
- 2 cups sugar
- 4 eggs
- 1 tsp. vanilla
- 5 cups flour
- 2 tsp. baking powder

Vietnamese Summer Rolls with Spicy Peanut Sauce (Adapted from CHOW)

Fresh and light, these Summer Rolls (sometimes called Salad Rolls) are a perfect appetizer or lunch on a warm summe
- Spicy Peanut Sauce:
- 1/4 cup smooth peanut butter
- 2 Tbsp. water
- 1/4 cup Hoisin sauce
- 4 tsp. soy sauce
- 2 tsp. chili-garlic sauce (found in the Asian food section of your grocery store)
- 1 garlic clove, crushed
- 1/2 tsp. sesame oil
- 2 Tbsp. fresh lime juice
- Summer Rolls:
- 12 individual rice paper wrappers (8-inch)
- 18 medium-sized cooked shrimp, sliced in half lengthwise
- 1 small package thin rice vermicelli
- 1 1/2 cups fresh bean sprouts, washed and dried
- 12 small leaves head lettuce (or 6 large cut in half)
- 12 thin slices of cooked leftover pork tenderloin
- 6 mint leaves, cut in half
- 12 sprigs cilantro

- 1 whole chicken, 3-5 pounds
- 1 Tbsp. olive oil
- 1 can beer
- 3 Tbsp. basic barbeque rub (recipe follows)
Avocado and Tomato Salad with Bocconcini

A beautifully balanced salad that is simply delicious!
- 2 avocados (ripe but not too soft)
- 1 head butter lettuce
- 3 Roma tomatoes, sliced
- 1/4 English cucumber, sliced
- 2 Tbsp. red onion, thinly sliced and chopped
- 2 Tbsp. fresh cilantro, chopped
- 1 tsp. lime juice
- 12 slices Bocconcini (if you don't have Bocconcini, 1/2 cup crumbled feta would work nicely)
- 3 Tbsp. olive oil
- 3 Tbsp. Balsamic vinegar
- 2 tsp. liquid honey
- salt and pepper

- 2 small or one large yellow onion, chopped
- 4 cups cooked rice
- 1 14-oz can diced tomatoes

- 1 can cherry pie filling (or any other pie filling)
- Glaze:
- 1 cup icing sugar
